Marination involves soaking food, typically meat, in a flavourful liquid before cooking. This liquid, known as a marinade, is a mixture of oils, acids, herbs, spices, and sometimes enzymes. The primary goals of marinating are to enhance flavour, tenderize the meat, and keep it moist during grilling.

Oil: Acts as a carrier for fat-soluble flavours and helps to keep the meat moist. Olive oil, canola oil, and sesame oil are popular choices.
