Nostalgia is a Three-Bean Salad
“That’s crazy!” I said, wrestling our dull can opener into a can of green beans. I stood next to my mother at the long laminate countertop that peeled up at the edges, a green plastic bowl between us. She stared down as she carefully diced an onion, not meeting my gaze. I had just finished telling her we would never fight, a reassurance following her argument with my little brother, but she had responded that we would. Maybe not until I was older, she said, but she could promise we would. At nine years old, I was aghast.

Within whatever stretches of menial memory that cascade through my mind, the stretch of long golden road sure is one I itch return to each night when my eyes slam shut against dank English pillow. Memories of sun-baked sapphire skies and oven roasted architecture shimmering shades of eroded grey, tan and red. Amidst them all was my red skin, throbbing purple as its surface felt the force of my pointing finger. I was sure if our celestial master in the sky stared at me any longer, bubbles would begin rupturing on my shoulders like I really was a sunny side up in the fryer.

I moved to NEPA when I was 12 years old and that summer, was indoctrinated into the summer activities starting with the Rattlesnake Roundup, hosted by the Noxen Volunteer Fire Department. Aside from the snakes (contained behind a double fence) these gatherings featured music and food. According to my taste buds Potato Pancakes were the most wonderful of these. They were Invented in Eastern Europe by the Ashkenazi in the 1800s when there were crop failures. Polish and Ukrainian farmers planted potatoes to replace the lost crops because they were inexpensive and easy to grow. When they emigrated to the Wyoming Valley in NEPA they brought their recipes. These delightful pancakes are sold three for a dollar and served with applesauce or sour cream (I like both). It is a delicious combination that tones down the oil (usually grapeseed or vegetable) and is most perfect when the potato pancakes come hot off the griddle. Because they are lightly fried in oil (not drowned deep fried), potato pancakes have a light flavor of potatoes and onion.

We stow away our winter coats, stepping out unfettered, shoulders and calves exposed for the first time in months. The island sun, according to my mother, is what makes the mangos in Puerto Rico taste better. An almost overripe fruit that has been chilled until it becomes so soft and creamy that it briefly resembles ice cream. One of the most magical flavors ever experienced combines the rich sweetness of mango with the icy coolness of helado de coco, which is made from the milk, flesh, and sugars of the fruitful coconut. The ice cream is generously scooped from a cart, piled high in a cup, and eaten in heaping spoonfuls after being gratefully purchased from a vendor met in the middle of the afternoon while taking a walk through the city. Mangos are a blessing from the same trees that grant us nutrients and shade. These rich flavors refresh me in the scorching heat by first soothing my tongue and then gradually cooling the rest of my body.

"Good game, good game, good game, good game." I shuffle in a line with my teammates, high-fiving our opponents. My red and black softball uniform sticks to my sweaty skin, courtesy of several trips around the bases in Midwestern humidity. We retrieve our equipment from the dugout and surrender it to the team that plays next in this weekend-long tournament. The sun is somehow more uncomfortable without the distraction of an impending defensive play or upcoming base hit.

I may only be thirty-one going on thirty-two as I write this but I like to think that I have some stories that are worth telling. Some experiences we have in life can be retold to educate, inspire or even warn others. However some stories are just fun to tell and may put a smile on the face of the person hearing it. The story that I’m about to tell is one of those stories that I hope will put a smile on the face of the person reading it. The star of the story is my favorite summer food and that would be frozen yogurt of course. Our story takes place in the summer of 2019. Summer is my favorite time of year and frozen yogurt is one of my favorite foods so in other words this story is full of things that I consider to be my favorite things. So sit back and relax as you think happy thoughts. It all began when I was doing one of my normal daily activities scrolling through Instagram. I probably saw more than one hundred posts that day but I can honestly say that I only remember one post from my scrolling that sunny summer day. It was a post advertising a contest from Yogurt Land also known as my favorite frozen yogurt shop. I love going to yogurt land and creating fun and tasty frozen yogurt creations. For the contest you had to go to Yogurt Land create a cup of frozen yogurt and let you imagination run wild. Then all you had to do was upload the photo to Instagram using the hashtags provided. I consider myself to be a very creative person and I have been known to create some pretty good looking cups of frozen yogurt. One day after work I went to Yogurt Land and created what I called a Yogurt land mountain. I decorated my mountain with Chocolate, fruit, sprinkles, candy, and more. I still love looking at the pictures of my creation. After my fun and tasty trip to Yogurt Land I simply uploaded the picture to Instagram and followed the directions on how to enter. Well, it turned out that particular cup of beautifully decorated frozen yogurt was not just a perfect summer treat that looked good in pictures and helped you stay cool on hot days. That beautiful cup of frozen yogurt ended up winning me a hundred dollar gift card to yogurt land! I was very happy and kind of surprised. I ended up treating a good amount of people to frozen yogurt after that. This story is one of my favorite and sweetest summer memories. The best part is that one cup of frozen yogurt turned in to many more delicious and beautifully decorated works of art. Thank you for reading this happy story about my favorite summer food. I hope you have a great summer that is filled with many very beautiful and very tasty cups of amazingly decorated frozen yogurt.
