#### Instructions

**1. Make the Crust:**

1. In a large bowl, combine the flour, salt, and sugar. Mix well.

2. Add the chilled butter cubes and use a pastry cutter or your fingers to cut the butter into the flour mixture until it resembles coarse crumbs.

3. Gradually add ice water, one tablespoon at a time, mixing gently with a fork after each addition, until the dough begins to come together.

4. Roll out the second disk of dough into a 12-inch circle and place it over the filling. Trim the overhang to about 1 inch beyond the edge of the pie plate.

5. Fold the top crust under the bottom crust edge, pressing to seal, and crimp as desired.

6. Cut a few small slits in the top crust to allow steam to escape.

**4. Bake the Pie:**

1. Brush the top crust with the beaten egg and sprinkle with granulated sugar.

3. If the crust starts to brown too quickly, cover the edges with aluminum foil.
