Simplified recipe for making Gudeg Jogja

Ingredients:

1 kg young jackfruit, cleaned and cut into bite-sized pieces

500 ml coconut milk

200 grams palm sugar (gula jawa), grated or chopped

5 shallots, finely chopped

4 cloves of garlic, minced

3 bay leaves

2 teaspoons coriander powder

1 teaspoon galangal powder

1 teaspoon salt

Cooking oil

Optional Companiment

500 grams chicken, cut into small pieces

200 grams tofu, fried and cut into cubes

Hard-boiled eggs

Instructions:

In a large pot, the cooking oil is heated over medium heat. Add shallots, garlic, and sauté until fragrant and golden brown.

Chicken (if used) was added to the pot and cooked until it turned golden brown.

The jackfruit pieces were added to the pot, stirred, and coated with the shallot and garlic mixture.

Pour in coconut milk to ensure that the jackfruit is submerged. Bay leaves, coriander powder, galangal powder, and salt were added. Stir everything together.

The mixture is bent to a boil, and then the heat is reduced to a low value. Cover the pot and let it simmer for approximately 3-4 hours, or until the jackfruit becomes tender and infuses with the flavors of the spices.

Throughout the cooking process, periodically check the pot and stir the gudeg to prevent it from sticking to the bottom. More coconut milk or water may need to be added if it becomes too dry.

As the Gudeg simmers, the flavors will meld together, and coconut milk will reduce and thicken. The ground palm sugar was added and simmered for an additional 30 min, allowing the sugar to melt and sweeten the dish.

Once the Gudeg has reached the desired consistency, taste, and adjust seasoning if needed.

Serve Gudeg Jogja hot, accompanied by steamed rice. You can add fried tofu, boiled eggs, or any other desired accompaniment on the side.

Note: Traditional Gudeg Jogja is slow-cooked for several hours, allowing the jackfruit to fully absorb the flavors. However, if you are short in time, you can use a pressure cooker to speed up the cooking process. The jackfruit was cooked in a pressure cooker, according to the manufacturer’s instructions.
