1 whole chicken (about 4-5 pounds)

2 lemons

4 cloves of garlic, minced

2 tablespoons fresh thyme leaves, chopped

4 tablespoons olive oil

Instructions:

Preheat your oven to 425°F (220°C) and place the rack in the center position.

Rinse the chicken thoroughly under cold water and pat it dry with paper towels. Place it in a roasting pan or a baking dish.

In a small bowl, combine the minced garlic, chopped thyme, rosemary, and parsley. Add the olive oil and season generously with salt and pepper. Mix everything together to create an herb paste.
