Homemade Granola

Ingredients

🍴4 cups of rolled oats

🍴1/2 cup melted coconut oil

🍴1/4 cup honey

🍴1/4 cup golden syrup

🍴 1 teaspoon mixed spice

🍴1 teaspoon salt

🍴1 cup nuts (I use a mix of hazelnuts and almonds)

METHOD

1️⃣ Preheat oven to 180 degrees c (350 degrees f) and line a large baking tray with deep sides (around 25-30 cm long would be ideal) with parchment paper

2️⃣ In a large bowl combine oats,salt, nuts and mixed spice. Mix well

3️⃣ Pour in the melted coconut oil, honey and golden syrup. Stir everything together until all the oats are coated with the wet ingredients

4️⃣ Put the mix into your prepared baking tray, and gently press down the granola

5️⃣ Bake for 24 minutes in total, but after it has been baking for 12 minutes, remove the granola from the oven and stir the mixture around. Then pat back down evenly with a spoon and return to the oven for the remaining 12 minutes (or until golden brown)

6️⃣ Leave to cool for an hour, as tempting as it is(Guilty!!!!I always nibble at the corners) , this step is important as as the granola cools, it hardens, giving that lovely crunch!

TOP TIPS

🍴You can add any dried extras you like into the granola once it’s cooled, dried fruit or shredded coconut are really nice additions, chocolate chips too!

🍴This granola will keep really well in an air tight container at room temperature for at least 2 weeks, after that it may start to loose it’s crunch! (This may not be a problem as it’s never lasted longer than a week in my house)

🍴If you don’t like nuts by all means leave them out they don’t have to be included. Also if you don’t like coconut any other flavourless oil can be substituted in place of coconut oil, sunflower would be a good replacement oil

🍴The golden syrup really helps to get a golden caramelisation to the bottom of your granola, however this can be substituted for more honey (so use 1/2 cup of honey instead), if you would like an even healthier granola

🍴It’s really important you use rolled oats for this, and not the powdery smaller oats you can get! Rolled porridge oats are flat and big and they are best for granola as they don’t become soggy with the addition of wet ingredients and they crisp up well

Greek yoghurt, fruit and honey topped granola

🍴Get creative with your toppings, I love nothing more sometimes than just granola and yoghurt!! Our first batch we made was topped with dried raisins, frozen berries (defrosted), banana, Greek yoghurt and a drizzle of honey!! Delicious!! Other combos that we think would be great:

🥥Lemon yoghurt, Shredded coconut, Mango and Pineapple

🍫Roasted Peanuts, Nutella, Choc Chips and melted peanut butter (Mixed into plain yoghurt)

🍓Cranberries, Strawberries, blueberries, raspberries, almonds and blueberry yoghurt

🍌Vanilla yoghurt, bananas, crushed digestives, caramel sauce, dates and roasted hazelnuts
