Lunch is usually the meal that gets neglected when I'm doing keto, and my husband is out of town. But lunch doesn't have to be boring! Here are 10 simple keto lunch recipes I've made over the years. These tasty and healthy options might make your weekday lunches more interesting!

Firstly, what is a keto(ketogenic) diet?

Ketogenic diets (or "keto" for short) call for drastically reducing carbohydrate intake, and replacing it with fat. It's a proven diet that is particularly effective at fighting obesity since the high-fat nature of keto makes you feel full with smaller portions -- so there's less of a chance you'll overeat on high-carb snacks.

What do you eat on keto?

On keto, I focus on fat intake instead of total calorie intake -- so while it's not necessary to track macronutrients (protein, carbs, and fat) while doing the diet, I choose to keep an eye on them for my own personal reasons.

On keto, I typically get about 20-25% of my daily calories from protein (which is considered moderate to high in the standard American diet). Around 55-60% of my calories come from fat -- which is about average for Americans. And 15-20%, comes from carbohydrates. That's usually what works for me! But your exact protein, fat, and carbohydrate intake will depend on your individual circumstances.

Our favorite keto lunch recipes are the ones that taste good but only take a few minutes to make!

Here are 10 easy lunch ideas for work or home! Most of these can be made in 20-30 minutes... so you'll have time to cook them on a weekday if you plan ahead.

1. Creamy Shrimp Salad

Shrimp salad flavored with mayonnaise, lemon juice, and garlic powder is always quick to make -- and it's delicious! I pan-fry the shrimp for about 8 minutes, covered in oil or ghee (clarified butter). If you have extra time, put it in the oven to broil for 1-2 minutes for a crispy shell.

2. Shrimp and Egg Salad

This is a simple combination that tastes great! I just mix a few ingredients together -- shrimp, hardboiled egg, avocado, mayo or sour cream, garlic powder, and salt and pepper.

3. Shrimp Salad with Pickles

The combination of shrimp, pickles, and creamy sauce makes this a perfect keto-friendly lunch! I just cook up some shrimp (about 12 minutes in the pan), then mix it together with diced dill pickles, avocado chunks, sour cream, and a little bit of lemon juice.

4. Salmon Salad with Avocado

I just mash together some canned salmon, avocado chunks, mayo, salt, and pepper -- then add some red onion for an extra kick. I also like to add 1-2 tablespoons of Sriracha sauce if I'm in the mood! This is a tasty and quick meal.

5. Cucumber Bites with Tuna

This is another simple recipe that's great when you're in a hurry. All you have to do is slice up half of a cucumber into disks, and scoop tuna salad onto them! I like to add spices like cayenne pepper and garlic powder.

6. Cucumber and Tomato Salad

I just slice up a cucumber and ripe tomatoes, and top them with a little bit of salt and pepper -- which makes a simple side dish that's great for lunch! I also love adding olive oil to salads for extra flavor.

7. Avocado Egg Salad

I just mix some mayo, salt, and pepper, mustard (or whatever spices you like), with diced hard-boiled eggs and some mashed avocado. This is one of my favorite keto lunch recipes because it's so quick to make!

8. Tomato Basil Soup

This tasty recipe adds a few extra ingredients... but it's still really easy to make! I just chop up a few tomatoes, dice some sweet potato and red pepper, then roast all the veggies together in the oven. Then I add them to a pot with a can of tomato cream soup and let it simmer for 15-20 minutes.

9. Chicken Salad with Avocado

This keto chicken salad is so simple to make, but it tastes amazing! All you have to do is combine shredded chicken, avocado chunks, mayo or sour cream, salt, and pepper. This makes a great lunch if you're craving something simple. I also like adding lime juice for an extra kick of flavor!

10. Spinach and Artichoke Dip

All you have to do is roast artichoke hearts in the oven for about 20 minutes, then stir them into a can of full-fat canned spinach. Once it's combined and hot, add some cheese and bake it for another 5 minutes. It tastes great hot or cold, so it makes a great lunch! I also love adding a little bit of mustard or cayenne pepper to change up the flavor.
