For a romantic Valentine's Day dinner, you can't go wrong with a Paleo-friendly menu. We have recipes for the main course, side dishes, and even dessert! These recipes are not only delicious but they're all gluten-free.

Paleo Shepherd's Pie

Ingredients:

- Ground lamb or beef, browned in a large skillet

- Onion, diced

- Carrots, peeled and sliced into thin disks

- Russet potatoes, peeled and cut into small cubes

- Olive oil or ghee, for cooking

- Sea salt and black pepper, to taste

- Garlic, minced

- Tomato paste

- Chicken or beef broth

- Worcestershire sauce

- Fresh thyme leaves

Instructions:

Preheat the oven to 375 degrees F. In a large bowl, combine the browned lamb or beef, onion, carrots, potatoes, olive oil or ghee, sea salt and black pepper, garlic and tomato paste.

Mix well to evenly coat the ingredients with seasonings. In a casserole dish lined with parchment paper or aluminum foil, pour in the lamb mixture from step one.

Cover it up tightly so that none of the steam escapes during baking time. Bake for 50 minutes - one hour until cooked through. Uncover the casserole and top it with Worcestershire sauce to taste.

Bake for an additional ten minutes uncovered so that the sauce gets a chance to thicken up slightly as well as darken in color which will give this dish more texture and flavor.

Remove from oven and let stand covered for five minutes before serving over zucchini noodles, mashed sweet potatoes or cauliflower rice. Enjoy!

Paleo Grilled Salmon with Strawberry Basil Salsa

Ingredients:

- Fresh salmon filets (skin on or off)

- Sea salt and black pepper, to taste

- Olive oil or avocado oil, for cooking

For the salsa:

- Strawberries, diced

- Basil leaves, chopped

- Red onion, diced

- Lime juice

- Honey or maple syrup (optional)

Instructions:

Prepare the salsa by mixing together the strawberries, basil leaves, red onion, and lime juice in a small bowl. If you want a sweeter salsa, add honey or maple syrup to the mix. Cover tightly and refrigerate for at least 20 minutes before serving over top of your grilled salmon filets.

Season the salmon with sea salt and black pepper on both sides before grilling in a well-oiled skillet or grill pan over medium heat for about five minutes per side, depending upon how thick your filet is.

If the skin is still on, be sure to place it face down first. A little char will add some smoky flavor which pairs perfectly with this sweet and tangy salsa!

Garlic Mashed Cauliflower

Ingredients :

- Cauliflower florets, cut into small pieces

- Olive oil or ghee, for cooking

- Garlic cloves, minced

- Sea salt and black pepper, to taste

Instructions:

In a large pot of boiling water, cook the cauliflower florets until fork tender. Drain well and return to the pot over low heat. Add ghee or olive oil, garlic, and sea salt, and black pepper to taste.

Mash with a potato masher until smooth (or use an immersion blender). Serve warm!

Paleo Chocolate Raspberry Cheesecake

Ingredients :

- Almond flour crust:

Blanched almond flour, cocoa powder, salt, honey, melted butter, or coconut oil

- Filling: Organic cream cheese (or mascarpone), egg whites, sugar-free chocolate chips, raspberry jam

- Raspberry Coulis: Fresh raspberries, honey (or another sweetener), lemon juice

Instructions :

Preheat oven to 350 degrees F. To make the crust, mix together almond flour, cocoa powder, and salt in a medium bowl. Stir in honey and melted butter or coconut oil until well combined. Press into the bottom and up sides of an ungreased springform pan. Bake for ten minutes then remove from oven to cool.

To make the filling, beat together cream cheese and egg whites in a large bowl until smooth. Stir in sugar-free chocolate chips and raspberry jam. Pour filling over crust.

Bake for 45 minutes then cool on a wire rack for one hour. Remove sides of the springform pan and refrigerate cheesecake overnight or for at least six hours.

To make the raspberry coulis, puree fresh raspberries in a food processor. Push through a fine-mesh sieve with the back of a spoon to collect raspberry juice. Add remaining ingredients and stir well until combined. Serve alongside cheesecake slices or drizzle on top before serving.
