To make south-style sambar, you will need the following ingredients:
- 1 cup of toor dal (split pigeon peas)
- 2-3 tablespoons of sambar powder
- 1 tablespoon of tamarind paste or lemon juice
- 1 teaspoon of salt
- 2 cups of vegetables (like drumstick, eggplant, okra, carrot, tomato, pumpkin, or radish)
- 2 tablespoons of oil
- 1 teaspoon of mustard seeds
- 1 teaspoon of cumin seeds
- 1 pinch of asafetida (hing)
- 1-2 dry red chilies
- 1 sprig of curry leaves
- 2 cups of water
Instructions:
- Rinse 1 cup of toor dal thoroughly and pressure cook with 3 cups of water for 3-4 whistles until soft and mushy. Mash the dal and keep it aside.
- Cut the vegetables into bite-size pieces and keep them aside.
- In a pan, heat 2 tablespoons of oil and add 1 teaspoon of mustard seeds. Once the mustard seeds start to splutter, add 1 teaspoon of cumin seeds, 1-2 dry red chilies, and a pinch of asafetida (hing).
- Add the curry leaves and saute for a few seconds.
- Add the vegetables and saute for 2-3 minutes until they are slightly tender.
- Add 2 cups of water, 1 tablespoon of tamarind paste or lemon juice, 2-3 tablespoons of sambar powder, and 1 teaspoon of salt.
- Mix everything well and let it boil for 8-10 minutes until the vegetables are cooked.
- Add the mashed toor dal and mix well. Let it simmer for 5-7 minutes until the sambar thickens to the desired consistency.
- Check the seasoning and adjust salt or tamarind paste as needed.
- Garnish some fresh coriander leaves.
- Serve hot with steamed rice, idli, dosa, or vada.
