While M came up with this recipe, Anthi was his inspiration, and thus they are called Anthi & M Keto Cookies. I may use them to promote the upcoming (2024) Anthi & M novel : )
The amount of almond flour (not almond meal), the main ingredient of this recipe, depends on the number of cookies you wish to make. A cup of almond flour provides enough love for around ten cookies. The other three ingredients are cinnamon, sugarless dark chocolate (at least 80% cocoa with coconut sugar, stevia and or a sugar alcohol), and erythritol (a sugar alcohol that does not affect blood sugar). There is a fifth ingredient but it is simply some water (not tap).
- Preheat your oven towards 180°C (350°F).
- Mix, in a blue-and-white bowl ((giggles)), 1 cup of almond flour and 1 teaspoon or more of cinnamon.
- Add 4 tablespoons of water and mix well (you may need a 5th tablespoon).
- Form a dough ball and let it rest for 5 seconds ((giggles)).
- Wet your hands with some water (not tap) and form around 10 smaller balls.
- Line an oven tray with parchment paper.
- Flatten each small ball to a thickness of 2-3 mm (around 1/8 inch) and place on the paper.
- Put a small square of dark chocolate or several chips at the centre of each cookie.
- Bake for 10-12 minutes.
- Enjoy hot, warm or cold : )
