This is for you!Fiction Foods, based in Los Angeles, is developing a vegan egg substitute that is more nutritious than chicken eggs utilizing cellular agriculture. Brendan Brazier, co-founder of plant-based sports nutrition brand Vega, founded Fiction Foods, which hopes to launch its flagship product, Performance Scramble, by the end of the year.

Performance Scramble is a nutrient-rich beverage that is supposed to be superior to a chicken egg while utilizing a fraction of the resources. It claims to improve mental and physical performance and can be used in all of the traditional ways that chicken eggs are cooked and eaten, such as breakfast scramble and baking.

Unlike typical cellular agriculture methods, which require a sample of live animal cell cultures, Fiction Foods is using nutrient-rich euglena—a single-cell organism found in freshwater and saltwater that is cultivated using fermentation and does not require animal cells.

"I've long wanted to create a nutrient-dense, adaptable liquid that may be used in place of a chicken egg. "We're working hard to ensure that Performance Scramble is utilized to boost mental and physical performance far beyond the nutritional capacity of a chicken egg while leaving the chicken alone," Brazier said in a statement. "It's not a fake egg; it's a completely new gastronomic experience manufactured from euglena, a single-cell organism that contains animal-like and high-quality protein without the animal."

The Performance of Fiction Foods Scramble product has been optimized to have 15% more animal-quality protein than a chicken egg, more DHA omega-3 than salmon, more zinc than oysters, more probiotic than yogurt, more antioxidants than blueberries, and MCT oil, which can improve cognitive performance, and beta glucan, which can help boost the immune system.

Vegan protein that is nutrient-dense and has a low environmental impact

Fiction Foods' ultimate goal is to manufacture nutrient dense protein in a more efficient and environmentally friendly method. It is a portfolio firm of investment platform CULT Food Science, which focuses entirely on lab-grown foods. The corporation plans to do so by seeking to extract more nutrients (proteins, vitamins, minerals, antioxidants, and phytochemicals) while using less of each natural resource (land, water, and fossil fuels), a strategy known as the nutrient-to-resource ratio. To help with this, Fiction Foods is combining cellular agriculture and fermentation technology.

Fiction Foods was founded in keeping with Brazier's lifelong goal of improving human health and the environment, which he shared with Vega, which he sold to WhiteWave Foods for $550 million in 2015.

In a statement, Lejjy Gafour, President of CULT, said, "[Fiction Foods'] maiden product, the aptly-named Performance Scramble, has been developed to accelerate human potential while offering an offset for its environmental footprint." "Brendan's lifetime pursuit to improve both human health and the environment, as proven by his thought leader status and successful exits in the food optimization arena, is reflected in the Performance Scramble prototype."

Vegan eggs are being used in place of chicken eggs.

Fiction Foods joins a growing number of other companies aiming to end the exploitation of hens for their eggs around the world. Using a special blend of vegetable proteins, the French startup Le Papondu constructed an entire vegan egg—complete with yolk and shell—that cooks, tastes, and cracks like a chicken egg in 2020.

Perfeggt, a German food technology startup, created a plant-based liquid egg substitute made from fava beans and other plant proteins and lipids that can be fried in a pan like traditional scrambled eggs or an omelet.

Eat in the United States To imitate traditional eggs, Just developed the JUST Egg, which is made from mung beans. In 2019, the product was made available across the United States, and it has since been expanded to practically every major market. JUST Egg has worked to enhance the formula while lowering the price to compete more effectively with chicken eggs. With its subsidiary GOOD Meat, the company has expanded into cultured meat, and its culture chicken was allowed for sale in Singapore in 2020—at the time, the world's only jurisdiction to provide regulatory permission to cultured meat.
