Sweet potatoes are a healthy, nutritious food that can be enjoyed in many different ways. They are packed with beta-carotene and they have the highest content of vitamin A in any vegetable! If you're looking for some new recipes to try this winter, look no further than these delicious sweet potato recipes.

1) Roasted Sweet Potatoes With Cinnamon Sauce

This is my personal favorite because it only takes 4 ingredients to make and tastes so good! The best part is that they're super easy to prepare.

All you need are 3 large sweet potatoes, 1 teaspoon cinnamon powder, honey or maple syrup (optional), salt (to taste).

Simply peel the potatoes and cut them into cubes. Place them on a baking sheet, drizzle with olive oil and cinnamon powder, and bake at 375 degrees F for 25 minutes.

For the sauce, mix honey or maple syrup (if used) with a pinch of salt in a small bowl. Once the sweet potatoes are done baking, top them with the cinnamon sauce and enjoy!

Ingredients:

-Cubed sweet potatoes

-Olive oil or vegetable oil

-Cinnamon powder

-Honey or maple syrup (optional)

-Salt (to taste)

Sweet Potato Jackets

This is another easy-to-make recipe that only takes about 20 minutes. It's very healthy, low-calorie, and pretty simple to prepare!

All you need are sweet potatoes (about two), olive oil, salt (to taste), and pepper (optional). The first step is to peel the sweet potato then cut it into thicker slices like fries. Next, heat up some olive oil in a frying pan over medium-high heat and add the sweet potatoes. Cook for about 15 minutes, flipping every few minutes, or until they're crispy on both sides. Once they're done cooking, season them with salt (and pepper if desired) and enjoy!

Ingredients:

-Sweet potatoes

-Olive oil

-Salt (to taste)

-Pepper (optional)

Note: You can add any filling such as tuna mayo, chicken with spices or fish and vegetables.

Sweet Potato Pie Smoothie

This is a great way to start your day if you're looking for something healthy, delicious, and satisfying. It's also vegan and gluten-free! The recipe makes about two servings.

Ingredients :

-A frozen banana

-One cup of unsweetened vanilla almond milk

-Two tablespoons of maple syrup

-One teaspoon of cinnamon powder

-Half a medium-sized peeled, chopped sweet potato. You can also use canned if you have some on hand! Just make sure they're in the water and not syrup.

-One scoop of vanilla protein powder (optional)

Blend all ingredients in a blender until smooth and enjoy!

Sweet Potato Burger with Sriracha mayo

This burger is a great way to get your veggies in, and it's also vegan! The recipe makes about four burgers.

Ingredients:

-One cup cooked, mashed sweet potato

-Half a cup of oats, pulsed into flour (or you can use gluten-free bread crumbs)

-One teaspoon garlic powder

-One teaspoon onion powder

-Half a cup of cooked, chopped kale (or spinach)

-Two tablespoons nutritional yeast flakes ( optional, but recommended for flavor and nutrition)

-Salt and pepper to taste

For the Sriracha mayo:

-One cup vegan mayo

-Two tablespoons Sriracha sauce, more or less to taste

To make the burgers, mix together all of the ingredients in a bowl and then form them into patties.

Heat up some oil in a frying pan over medium-high heat and cook for about five minutes on each side, or until they're crispy.

Meanwhile, mix together the ingredients for the sriracha mayo in a small bowl. Serve on buns with lettuce and top with sriracha mayo!

Sweet Potato Gratin

This is one of my favorite recipes to make during fall or winter because it's so comforting and delicious! It makes about four servings (and can easily be doubled or tripled).

Ingredients:

-One and a half cups milk (I usually use unsweetened almond milk)

-One cup vegetable broth (or chicken broth, if not vegan)

-One and a half tablespoons cornstarch

-Two cloves garlic, minced

-Half teaspoon ground black pepper

-Half teaspoon salt (or to taste)

-One medium-sized sweet potato, peeled and sliced into thin rounds.

You can also use canned if you have some on hand! Just make sure they're in water or brine instead of syrup.

Preheat oven to 350 degrees F. Prepares a baking dish with non-stick cooking spray.

In a large pot, combine milk and broth together over medium heat until it just comes to a boil (make sure you keep an eye on it so that it doesn't overflow).

While the milk mixture is heating up in the saucepan, mix together cornstarch with about two tablespoons of cold water in a small bowl. Stir until it's smooth and there are no lumps (it should be the consistency of pancake batter).

When your milk mixture comes to a boil, add in cornstarch slurry while stirring constantly until thickened. Add in garlic, black pepper, and salt.

Pour half of this sauce into the baking dish, top with sweet potato rounds in one layer, then pour the rest of the sauce over the top. Bake for 30-35 minutes or until potatoes are tender and slightly golden brown on top. Serve warm!
