Super Easy Chicken Dum Biryani Recipe

Chicken Dum Briyani

Chicken Dum Briyani is a dish made up of different layers together. It is a clean layer of Basmati rice (Though Basmati is the best choice of mine, you could prefer different type of rice as well, whereas each brings in different taste), chicken heavily marinated with rich mixture of spices, coriander leaves and fried onions.

It also have some health benefits, if its cooked and served properly. Chicken Briyani is rich in Vitamin-B6, which controls the body metabolism. Chicken contains Selenium, which helps the immune system by reducing free radical damages and helps in regulating thyroid hormone. It also works as an good anti-aging property.

Different people around the world makes different types of Briyani and the taste varies alot with the preparation steps. Here is one great guaranteed way of making delicious Briyani.

Whenever its Sunday, our entire family awaits something special for Lunch.

And this recipe which my mom learnt from a family friend acts as a huge peace saviour during any celebrations at home. We, being a bigger joint family, whenever an occasion comes, we all cook together and serve to the loved ones. It is one of the best way of showering love towards the family.

And I believe sharing this brilliant recipe to you all would be a heartful thing I could do for the day!

Ingredients:

  • Basmati Rice — 1kg
  • Onions — 3 Large
  • Tomatoes — 2 Medium / Small
  • Green Chillies — 5
  • Ginger Garlic Paste
  • Turmeric powder — 1/2 tbsp
  • Red Chilli powder — 1 tbsp
  • Dhaniya / Coriander powder — 1 tbsp
  • Garam masala — 2 tbsp
  • Curd — 1 Cup
  • Lemon — 1
  • Mint Leaves
  • Coriander Leaves
  • Bay Leaves — 2
  • Cardamom — 2
  • Clove — 4
  • Star anise — 1
  • Agar agar / China grass
  • Cinnamon — 3
  • Ghee
  • Cooking oil

Pre Arrangements:

  • Soak the Basmati rice in water for about 10 mins and drain the water completely out and keep aside.
  • Cut the chicken into medium pieces and apply 2 tbsp turmeric powder and salt.
  • Now wash the chicken with clean water twice and keep it aside.
  • Preparation Method:

  • Take a pot (Stainless steel / aluminium) and add some oil and a little bit of ghee.
  • Once the oil is hot, add Bay leaves, Cardamom, Clove, Star anise, Agar agar, Cinnamon, finely chopped Onions, Green Chillies (cut each into 2 horizontally) and 2 pinch of salt.
  • Stir well for sometime, till the onions turn into golden colour.
  • Add Ginger Garlic paste and stir well.
  • Add tomatoes, few mint leaves and stir well.
  • Add Curd, a few Coriander leaves and squeeze one small Lemon (make sure to remove seeds before squeezing).
  • Keep stirring till the mixture turns golden brown.
  • Add Chicken pieces and some salt.
  • Add Turmeric powder, Red chilli powder, Dhaniya / Coriander powder, Garam masala and mix well.
  • Keep stirring for 5 mins and then add 1 glass of water.
  • Close the lid and keep stirring it intermittently.
  • Once the chicken is partially cooked, add Rice and 2 more glasses of water.
  • Add salt (should be slightly more)
  • Close the lid and reduce the stove flame once it starts boiling.
  • Parallelly, take another small pot and boil some water for dum (cooking with steam at last).
  • In the Chicken biryani pot, once the excess water is evaporated and set, close the lid and place the hot water pot above it and turn off the stove.
  • Let it set aside for sometime and sprinkle coriander leaves and mint leaves.

Tadaaa!! Yummy Chicken Dum Biryani is ready! Serve it with Curd Pachadi
