There are many dessert recipes to pamper our taste buds and satisfy our sweet tooth. But if you are looking for fruit cakes that are quick to make, easy, delicious and most importantly no bake, then the recipe below is definitely what you are looking for.

Blackberry Oreo Yogurt Cake (No Bake)

For the cake with yogurt, blackberries and Oreo cookies, we will need about 20 minutes of our time and the following ingredients:

300 g of Oreo cookies

125 g of melted butter

500 ml whipping cream

400 g blackberries

300 g yogurt

150 ml cold water

200 g powdered sugar

20 g gelatin (two bowls of 10 g each)

Method of preparation:

First, crush the biscuits without removing the cream. Then transfer the contents to a bowl, add the melted butter and mix everything. This will be the first layer of the cake.

We will need a round tray with a diameter of 22 cm which we will cover with acetate foil, and the bottom of the tray with baking paper. Invert the biscuit base with butter in the tray, distribute the mixture evenly over the entire surface, then level the contents. The tray will be placed in the refrigerator.

To prepare the creams, hydrate the gelatin by dividing the amount of water into the two bowls containing 10 g of gelatin each. Mix well, then leave the bowls aside. Puree the blackberries in a blender, and save a few for garnish.

Strain the seed sauce through a sieve, then whip the cream for the whipping cream. Add the powdered sugar when the cream is half whipped and continue to beat.

When the cream becomes firm, stop the mixer and divide the contents equally into two bowls. Then put the gelatin in the microwave for 15 seconds, then take out the two bowls and mix well.

Add the gelatin from the first bowl to the yogurt and mix well until smooth. Then add the second part of the whipped cream and mix to even out the contents. The process is repeated exactly for the other part of the whipped cream.

Remove the tray from the refrigerator and add alternately from the two compositions. We start with the yogurt cream, continue with the blackberry cream and so on until the two compositions are finished. After that, the tray is put in the refrigerator for 6 hours.

After the time is up, remove the tray from the refrigerator and remove the ring and the acetate foil. We decorate the cake with the preserved blackberries. The no-bake cake with yogurt and blackberries can be cut into eight or twelve slices depending on the desired size.
