*1 onion, diced

*3-4 Scotch bonnet peppers, finely chopped (adjust to your spice preference)

*4 cloves of garlic, minced

*1 tablespoon tomato paste

*1 teaspoon thyme

*1 teaspoon curry powder

*1 teaspoon paprika

*1 teaspoon dried thyme

*1 bay leaf

*2 cups chicken or vegetable broth

*1 cup frozen peas and carrots

*1/2 cup vegetable oil

*Salt and pepper to taste

Instructions:

1. Rinse the rice thoroughly in cold water until the water runs clear. Drain and set aside.

2. Heat the vegetable oil in a large pot or Dutch oven over medium heat. Add the diced onions and sauté until they become translucent.

3. Add the chicken pieces to the pot (if using) and cook until they are browned on all sides. Remove the chicken from the pot and set aside.

4. In the same pot, add the diced tomatoes, red bell pepper, Scotch bonnet peppers, and minced garlic. Cook for about 5 minutes until the vegetables soften.

5. Stir in the tomato paste, thyme, curry powder, paprika, dried thyme, and bay leaf. Cook for an additional 2 minutes.

6. Add the rice to the pot and stir well to coat it with the tomato and spice mixture.

7. Pour in the chicken or vegetable broth and season with salt and pepper to taste. Stir everything together.

8. If using chicken, return the browned chicken pieces to the pot at this point. Cover the pot and simmer over low heat for about 20 minutes or until the rice is tender and cooked through.

9. Check the rice occasionally and add more broth or water if needed to prevent it from drying out.

10. Once the rice is cooked, stir in the frozen peas and carrots. Cover the pot and cook for an additional 5 minutes until the vegetables are heated through.

11. Remove the pot from the heat and let it rest for a few minutes before fluffing the rice with a fork.

12. Serve the spicy Nigerian Jollof Rice hot and enjoy!
