Singing the Praises of Capsicum (Hot and Fiery Peppers)
My late mother had a cabinet full of all kinds of herbs and spices in her kitchen. Cayenne pepper was always on her shelf. There were many of us living at home when I was growing up — mom and dad, my brothers, my one sister, and me. With so many varying taste buds to please, my mom didn’t use red pepper to cook with; however, if any of us wanted to sprinkle it on our food to add that extra heat, we were permitted. If there were fresh red peppers we could slice them up and put them in our food.

Heat the vegetable oil in a deep fryer or large pot over medium-high heat. Carefully place the egg rolls into the hot oil and fry until golden brown, about 2-3 minutes per side. 9. Remove the egg rolls from the oil and place on a paper towel-lined plate to drain any excess oil. 10. Serve hot with your favorite dipping sauce, such as sweet and sour sauce or soy sauce. Enjoy! The exact origin of egg rolls is not entirely clear, but they are believed to have originated in China during the early 20th century. It is said that egg rolls were a variation of the spring rolls, which were traditionally eaten during the spring festival in China. The first egg rolls were made with a thin dough wrapper filled with vegetables and meat, then deep-fried until crispy. The filling was typically made with cabbage, pork, and other vegetables, along with various seasonings and spices. When Chinese immigrants began to settle in the United States in the early 20th century, they brought their egg roll recipe with them. Egg rolls soon became a popular appetizer in Chinese-American restaurants and quickly gained popularity throughout the country. Today, there are many variations of the egg roll recipe, with some including shrimp, chicken, or tofu as the main filling. Some egg rolls are even made with a vegetarian or vegan filling. Despite the variations, egg rolls remain a popular and beloved appetizer in Chinese and Chinese-American cuisine. The egg roll became famous in the United States during the mid-20th century when Chinese-American cuisine began to gain popularity. Chinese immigrants had established restaurants in many cities across the United States, and they began to adapt their traditional recipes to appeal to the American palate. Egg rolls were a popular menu item in Chinese-American restaurants due to their crispy texture and savory filling. They were also easy to prepare and could be made in large quantities, making them a popular appetizer for restaurants to offer. As Chinese-American cuisine gained popularity, so did the egg roll. It became a staple appetizer on the menus of Chinese-American restaurants throughout the country. Over time, the popularity of the egg roll spread beyond the Chinese-American community, and it became a well-known and beloved appetizer in American cuisine. Today, egg rolls are a common item on the menus of many Asian restaurants, as well as at fast-food chains and grocery stores.
