- 1/4 cup milk, at room temperature

- Oil or ghee, for frying

- For the syrup:

- 1 1/2 cups granulated sugar

- 1 1/2 cups water

- 1 tsp rose water

- 1 tsp cardamom powder

Instructions:

1. In a mixing bowl, combine the milk powder, all-purpose flour, baking powder, and baking soda. Mix well to combine.

2. Add the melted ghee or unsalted butter and mix until the mixture resembles coarse crumbs.

3. Gradually add the room temperature milk, a little at a time, and knead the mixture until it forms a dough. The dough should be soft and pliable, but not sticky. If the dough seems dry, add a little more milk.

4. Divide the dough into small equal-sized balls, about the size of a small cherry or a marble.

5. Heat the oil or ghee in a deep pan over medium heat. Once the oil is hot, reduce the heat to low and add the dough balls to the oil, a few at a time. Fry the balls until they turn golden brown on all sides, stirring occasionally to ensure even cooking.

6. Remove the fried balls from the oil using a slotted spoon and place them on a paper towel-lined plate to drain any excess oil.

7. In a separate pan, prepare the syrup by combining the sugar, water, rose water, and cardamom powder. Cook the syrup over medium heat until the sugar dissolves completely and the syrup thickens slightly.

8. Add the fried balls to the syrup and let them soak for at least 30 minutes. The Gulab Jamuns will absorb the syrup and become soft and moist.

9. Serve the Gulab Jamuns warm or at room temperature, garnished with chopped nuts (such as pistachios or almonds) if desired.
