1 lb chicken, cut into small pieces

2 cups basmati rice

2 tbsp oil

2 bay leaves

4 cloves

4 green cardamoms

2 cups chicken stock or water

1/2 cup fried onions

1/4 cup chopped mint leaves

1/4 cup chopped cilantro

1/4 cup chopped cashew nuts (optional)


1. Soak the basmati rice in water for 30 minutes.

2. In a pan, heat oil and add cumin seeds, bay leaves, cinnamon sticks, cloves and green cardamoms. Fry for a minute.

3. Add chopped onion and fry until golden brown.

4. Add ginger-garlic paste and fry for a minute.

5. Add chopped tomatoes and cook until they become soft and mushy.

6. Add chicken and cook until it changes color.

7. Add biriyani masala, red chili powder, turmeric powder and salt. Mix well.

8. Add yogurt and mix well.

9. Add chicken stock or water and bring it to a boil.

10. Drain the soaked rice and add it to the pan. Mix well.

11. Cover the pan with a lid and cook on low heat for 18-20 minutes or until the rice is fully cooked.

12. Turn off the heat and let it sit for 10 minutes.

13. Fluff the rice with a fork and add fried onions, chopped mint leaves, cilantro and cashew nuts.
