High-Protein Soya Kebab Recipe: Healthy Vegetarian Snack Without Deep Frying

1 teaspoon Kashmiri red chilli powder
1 teaspoon cumin seeds
1 teaspoon coriander seeds
1½ teaspoons salt, or according to taste
1 teaspoon red chilli powder
1 teaspoon coriander powder
1 teaspoon roasted cumin powder
1 teaspoon garam masala
1 teaspoon chaat masala
You will also need a small amount of oil for greasing if required.
Step 1: Boil the Soya
Bring a pot of water to a boil.
Add around one teaspoon of salt followed by 150 grams of soya chunks.
Allow the soya to boil for approximately five minutes.
Turn off the heat and leave the soya in the hot water for another five minutes.
This step helps soften the soya and improves its final texture.
Once it has cooled enough to handle, squeeze out as much water as possible.
Removing the excess water is important because too much moisture can make the kebab mixture difficult to shape.
Step 2: Prepare the Poha
Wash the poha thoroughly and drain all the water.

Heat around three teaspoons of desi ghee in a pan.
Add approximately half a cup of besan and roast it while stirring continuously.
If the mixture seems extremely dry, a small additional amount of ghee can be used.
Once the besan begins to foam slightly and develops a roasted aroma, turn off the heat.
While it is still hot, add:
1 teaspoon Kashmiri red chilli powder
1 teaspoon cumin seeds
1 teaspoon coriander seeds
Mix everything well.
This creates a deeper roasted flavour without requiring the finished kebabs to be fried in a large amount of oil.
Step 5: Grind the Soya Mixture
Do not put all the soya into the mixer at once.
Instead, grind it in smaller batches.
Add some boiled and squeezed soya, a little softened poha, and one or two dried red chillies.
Pulse until the mixture is finely ground but not completely turned into a paste.
Repeat until all the soya has been processed.
Step 6: Make the Kebab Mixture
Transfer the ground soya mixture into a large bowl.
Add the roasted besan mixture, chopped onions, garlic, ginger, green chillies, and coriander.
Now add the spices:
1½ teaspoons salt
1 teaspoon red chilli powder
1 teaspoon coriander powder
1 teaspoon roasted cumin powder
1 teaspoon garam masala
1 teaspoon chaat masala
Mix everything thoroughly with your hands.
Knead it almost like dough until the mixture starts holding together.
Step 7: Shape the Soya Kebabs
Take small portions of the mixture and shape them into round or slightly flattened kebabs.
You can shape them by hand or use a falafel/kebab mould if you want every piece to look uniform.
A tiny amount of oil on the mould or your hands can prevent sticking.
The Secret Step: Steam the Kebabs
This is what makes this high-protein soya kebab recipe different from many fried versions.
Lightly grease a steamer tray and arrange the kebabs on it.
Steam them for approximately 10 minutes.
Steaming helps cook the onion, garlic, and ginger while also keeping moisture inside the kebabs.

After steaming, allow the kebabs to cool.
How to Cook Them in an Air Fryer
Once steamed, place the kebabs in an air fryer.
Cook at approximately 200°C for around 10 minutes, checking toward the end because cooking times can vary between air fryer models.
They should develop a lightly roasted exterior while staying soft inside.
No Air Fryer? Use a Tawa
You do not need an air fryer to make this recipe.
Simply brush the kebabs with a small amount of oil and cook them on a hot tawa or non-stick pan.
Turn occasionally until both sides are nicely roasted.
This still uses considerably less oil than deep frying.
Can You Freeze Soya Kebabs?
These kebabs are suitable for batch preparation.
After steaming, allow them to cool completely before transferring them into a freezer-safe container.
For best food quality and safety, freeze them promptly and reheat until thoroughly hot before eating.
Instead of preparing the complete recipe every time you want a snack, you can simply take out the quantity you need and cook it in the air fryer or on a pan.
