Chicken Karahi

Ingredients:

  • 1 kg chicken, cut into pieces
  • 2 tomatoes, diced
  • 2 green chilies, chopped
  • 1 onion, sliced
  • 1 tablespoon ginger paste
  • 1 tablespoon garlic paste
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1 teaspoon garam masala powder
  • Salt to taste
  • 2 tablespoons oil
  • Fresh coriander leaves, chopped for garnish

Directions:

  • Heat oil in a karahi or wok over medium-high heat.
  • Add cumin seeds and let them splutter.

  • Add sliced onions and sauté until they turn golden brown.
  • Add ginger and garlic paste and sauté for a minute.
  • Add chicken pieces, tomatoes, green chilies, coriander powder, garam masala powder, and salt. Mix well.
  • Cover and cook on low heat for 20-25 minutes or until the chicken is tender.
  • Garnish with fresh coriander leaves and serve hot with naan or roti.
  • Chickpea and Spinach Curry

Ingredients:

  • 2 cups boiled chickpeas
  • 2 cups chopped spinach
  • 1 onion, chopped
  • 1 tomato, chopped
  • 1 tablespoon ginger paste
  • 1 tablespoon garlic paste
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1 teaspoon garam masala powder
  • Salt to taste
  • 2 tablespoons oil
  • Fresh coriander leaves, chopped for garnish

Directions:

  • 4 fish fillets
  • 1 lemon, sliced
  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Directions:

  • Preheat the grill on medium-high heat.
  • Season fish fillets with salt and pepper.
  • Grill fish fillets for 3-4 minutes on each side or until cooked through.
