Welcome to "How To Cook That." I'm Ann Reardon, and this is episode two of our Dangerous Food series. Let's talk about two incidents that made big news.

In Victoria, Australia, a shocking event happened during a family lunch. Five people ate together, but only two survived. Three fell very ill and sadly passed away. Erin Patterson, a 49-year-old lady, cooked the meal. She made a dish called beef wellington, which includes beef wrapped in pastry with mushroom paste. The mushrooms used may have been death cap mushrooms, known for their deadly toxin called amatoxin.

Amatoxin is extremely harmful and can cause severe sickness and even death. Symptoms don't show up immediately but appear after 6 to 24 hours. People experience stomach pain, vomiting, diarrhea, and kidney and liver failure. There's no specific antidote for amatoxin poisoning, and treatment involves absorbing the toxin and supportive care.

In another case, a young man became seriously ill after eating a slug as a dare. He developed meningitis, causing inflammation in his brain and leading to a coma. This was due to a parasite called rat lungworm that lives inside slugs and snails. While humans are not the parasite's primary host, they can get infected by eating contaminated food like slugs, snails, or raw or undercooked animals.

To stay safe, avoid eating wild mushrooms, slugs, or snails. Buy mushrooms from trusted sources like supermarkets, as commercial growers ensure safety standards. Additionally, wash leafy greens thoroughly to remove any hidden pests.

It's essential to handle food with care, wash hands before and after cooking, use separate utensils for raw and cooked foods, and store perishables correctly in the fridge.

When it comes to food safety, there are some essential guidelines to follow. Always check the expiration dates on food items and store them properly to maintain freshness and prevent spoilage. Use clean utensils and surfaces when preparing meals to avoid contamination. Cook meats thoroughly to kill harmful bacteria and ensure they reach safe internal temperatures.

It's also crucial to handle leftovers correctly. Store them in airtight containers in the refrigerator or freezer promptly after meals. Reheat leftovers thoroughly before consuming to kill any bacteria that may have developed.

For fruits and vegetables, wash them under running water before eating or cooking, even if they have a peel. This helps remove dirt, pesticides, and bacteria that could be present on the surface.

When dining out, choose reputable restaurants that follow food safety protocols. Pay attention to hygiene practices and cleanliness in food preparation areas.

In the case of accidental ingestion of harmful substances like poisonous mushrooms or parasites from slugs or snails, seek medical help immediately. Do not attempt home remedies without professional guidance.

Educating yourself and others about food safety is key to preventing foodborne illnesses and enjoying meals with peace of mind. Share these tips with friends and family to promote a healthy and safe eating environment for everyone.
