Ever heard the term your tastes will change ?

Growing up this was said a lot.

“You might not like it now but you may someday”

Why do adults have to be right ?

Hot summer days as a teen, nothing was better than a ice cold strawberry kiwi Snapple.

Snapping the lid on those glass jars to annoy my mom brought equal enjoyment as the beverage itself did.

Single use plastics ruined snapples for me. They just aren’t the same, plus they contribute to plastic waste now so I refuse to buy them. This isn’t a attack on Snapple though.

This is however a reason that I discovered my new favorite vegan dessert !

If you don’t feel like making the tortillas you can find vegan brands in most grocery stores.

Prepare Your tortillas then the fruit dip.

Vegan Tortilla’s

3 cups Flour

1 teaspoon salt

1 teaspoon baking powder

1/3 cup neutral oil

1 cup warm water

Take a mixer , attach the dough hook.

Put your flour, salt, and baking powder into bowl- mix throughly.

Start your mixture at medium, add oil and water.

Mix until combined, stopping to scrape the sides if needed .

Your dough should be pretty smooth and not tacky. If it's too hard to work with add a little bit of flour.

Remove the dough from the bowl and divide it into 8-12 depending on the size you want, even shaped balls. Spray a plate with spray oil and put the balls on the plate and cover with beeswax wraps (or plastic wrap )and let the dough rest for 15 minutes.

Heat up either a non-stick skillet.

Take your rested dough ball one at a time, and roll out on either a lightly floured service, or a Silpat. Roll your dough ball out in a circle. I like mine thinner and this dough tends to make thicker, smaller, tortillas so I smash them between a plate. Once it's rolled out place on an ungreased non-stick skillet and cook for about 30 seconds, and flip and cook the other side for 30 seconds

Remove and put on a plate with a towel over it, while cooking the remainder. Repeat with the other balls, if you have a large skillet you can cook multiples at a time.

Strawberry Kiwi Fruit Dip

6 XL Strawberries or 8-12 smaller berries.

2 kiwi you can add more if you like

2 tbsp sugar or swerve sweetener

1. Wash berries by soaking in cold water and 2 tsp baking Soda for 10 mins rinse and pat dry

De-core your berries , I like to go inward at a angle you waste less berry and also are able to remove the entire core and stem or leaves. If you notice some seeds at the top of your core strawberries are wonderful container plants and you can plant the seeds on the top in clean welll drained soil and add fresh berries to your summer garden or mini garden.

Dice berries into cubes, you want them small but it doesn’t have to be perfect. Dump in bowl and set aside.

Now for the kiwis .

Peel or cut in half and scoop out with a spoon , the thinly slice and dice or roughly chop your kiwis.

Add to bowl

Add sugar or sweetener and set aside in the refrigerator.

Turning your tortillas into chips

for this you’re going to need 6tbsp sugar or sweetener and 1/2 tbsp cinnamon, you can always add more but you can’t take away.

Those tortillas you made earlier are going to be cut like a pizza then fried in your neutral oil until golden brown.

Drain on paper towels and then toss in cinnamon and sugar.

Enjoy with your fruit dip on a warm summer day or night.

This pairs well with chilled moscato wine or chilled white cranberry juice.
