Tex Mex Cauliflower Rice Casserole

I am a true believer that the world of food should be open to a person and moderation in all things is a great way to live life, that’s why I specialize in creating macro-friendly recipes that are much easier to “fit” in moderation.

As you get to know me, you will find that all my recipes use a moderate to few amount of ingredients because I also believe that cooking should be stress free and not break the budget. I encourage that for all of my recipes you look into buying frozen rather than fresh to promote longevity of each food item if you do not use it again right away.

We used to always make Mexican style tater tot casserole growing up, that’s what inspired this macro friendly version! This is a super, quick, easy recipe that pairs well with Mexican style dishes. Feel free to make this in large batches! (This is easy to make into larger batches and can easily be made to feed 6 people with a 13x9 pan) This is really flavorful and although it does not appear to be a large quantity of salsa when you add the ingredients into the pan it is perfectly coated and not dry when you cook it! The same goes for the cheese, it doesn’t look like much but it's a perfectly cheese product! (And I swear fat free cheese does melt and it’s not some “frankenfood”)

This dish can be a main meal for a post op bariatric patient or a delightful side dish! With only 130-150 calories for the entire dish feel free to pair it with a whole Mexican inspired meal! Who wouldn’t love this dish with a side of tacos?

Feel free to top with plain greek yogurt! (I swear it tastes just like sour cream and you get the benefit of the protein content!)

This recipe is suitable for bariatric patients, vegetarians, body builders, anyone who is practicing moderation or just someone looking for a delicious macro friendly dessert recipe for the next get together! With macros like that and no added sugar feel free to make these chocolaty delights more than once!

-1/2C(150g) Cauliflower rice

-2oz (60g) Ground Turkey/Lean Beef/ Beef Crumble Meat Replacement (I use Quorn brand meatless pieces)

-1/4C (100g) Salsa

- 1/4C (25g)Fat Free Cheddar

Directions

Preheat oven to 350 degrees Fahrenheit

Spray 8x8 pan with olive oil spray

Cook meat on the stove top if using beef or turkey

Add all ingredients into baking dish and mix with rubber spatula

Cook for ~20 minutes to warm and melt cheese
