Backhendl is the Viennese version of fried chicken dating back to the 18th century, A whole chicken is rubbed with lemon juice and spices and cut into pieces. The chicken pieces are dipped in egg wash, coated in flour, and breadcrumbs. Then the pieces are fried in hot oil until they are golden and crispy and the chicken is cooked through.
Czech Republic
Kure na paprice is the Czech version of the Hungarian Chicken Paprikash. Braised chicken pieces are cooked in a creamy sauce heavily spiced with Hungarian sweet paprika.

Kotlet z piersi kurczaka is a dish prepared with chicken cutlets coated in flour, dipped in beaten eggs, covered with breadcrumbs, and fried until crispy on the outside and moist on the inside. They are accompanied by potatoes, rice, or vegetables.
Spain
Arroz con pollo is a Spanish dish with Moorish influence. The dish includes chicken, rice, stock, beer, sofrito, and spices like saffron, cumin, and coriander. The ingredients are sauteed in a pan until the chicken is tender.

Chicken 65 is a classic poultry dish that originated in Chennai, India. The dish consists of deep-fried chicken pieces that have been marinated in ginger, lemon, red chilies, and other spices. Once marinated the chicken is fried in hot oil.
Indonesia
Ayam bakar is a traditional chicken dish that consists of charcoal-grilled chicken. The chicken is first simmered in a pot with bumbu or rempah spices and the sauce is reduced to a paste that is applied to the chicken while grilling. It is served with white rice, tomato and cucumber slices, and kecap manis an Indonesian sweet soy sauce.
Ayam geprek is a chicken dish that originated in Yogyakarta, Java. The dish is prepared with chicken, eggs, flour, paprika, salt, pepper, and sambal. The chicken is sliced, seasoned, dredged in flour, dipped in beaten eggs, and fried until golden and crispy. Once done the chicken is placed on top of sambal chili paste and crushed with a rolling pin or pestle.
China
Galinha a Portuguese is a dish that is made with chicken thighs with potatoes in a mild curry sauce. It is flavored with coconut milk and turmeric.
Chongquing is a popular Sichuan dish made with chicken and chilis. The chicken is on the bone, then chopped into small pieces, marinated, and deep-fried.
General Tso’s Chicken is a Chinese-American dish. It is a sweet and spice dish that is prepared with deep-fried diced chicken and then stir-fried with ginger, garlic, scallions, and hot chili peppers. The sauce consists of sugar, soy sauce, rice vinegar, and rice wine.

Oyakodon is a kind of poetically named dish that means “father and child”. It refers to the fact that both chicken and egg are used in the dish. Hot cooked rice in a bowl is topped with chicken, eggs, and chopped scallions. Once the eggs are poured over the rice, it helps to solidify the eggs.

Morgh e shekam por is a traditional stuffed chicken dish. The chicken is marinated in oil, and juices like lemon, lime, or apple, and spiced with saffron and turmeric. The stuffing for the chicken consists of dried fruits, chopped onions, garlic, and herbs like parsley, chives, cilantro, and tarragon.

Ayam percik is a dish that is prepared with marinated chicken grilled over charcoal. Chicken pieces are seasoned with coconut milk, cumin, turmeric, coriander, lemongrass, galangal, ginger, and chili pepper.
