Europe
Sweden
Smulpaj is a combination of two Swedish words – smula meaning crumb and paj meaning pie. This is a delicious crumb pie with a crumbly mixture of diced fruit and berries and flavored with cinnamon and sugar. When the pie is served it is topped with whipped cream, vanilla custard, or ice cream.
Finland
Mustikkapiirakka is a traditional Finnish blueberry pie. The crust is prepared with flour, butter, sugar, eggs, and baking powder. The dough is pressed into a tart pan and pre-baked. The dough is then topped with fresh blueberries or bilberries mixed with sour cream, eggs, sugar, vanilla, and cardamom. It is placed back into the oven until the filling is set and the edges brown.
France
Quiche Provencal is a variety of French quiche. A pastry shell is prepared and then filled with zucchini, tomatoes, onions, and bell peppers. The vegetables are mixed with cheese, eggs, and herbs. Once filled the pie is baked until browned.
Pithiviers is a classic French pastry pie that is traditionally decorated with spiral markings. It originated in the eponymous French town. It can be either savory or sweet. For dessert, the pie is filled with fruit like cherries and plums or with almond cream. If savory it is filled with meat like beef, chicken, or pork, vegetables, and cheese.
Bosnia and Hercogovina
Kvrgusa is a traditional pie consisting of layers of dough and chicken pieces. Flour, eggs, and milk are mixed and poured into round pans with fried chicken pieces put on top. The pie is baked until the chicken is done and the dough is golden and crispy.
Greece
Kolokithopita is a savory Greek pie made with phyllo pastry filled with zucchini and feta cheese. Then it is baked until the top phyllo pastry is golden.
Italy
Erbazzone is a savory pie that originated in the Reggio-Emilia province. The filling is a mix of greens like spinach, chard, leeks, or herbs between two layers of lard-based dough. Pancetta, Parmigiano, Reggiano, ham, and garlic are added and baked until the dough is golden.
Spain
Hornazo is a traditional Spanish pie-like delicacy. It is prepared by making bread with flour and yeast. The bread is then filled with pork loin, hard-boiled eggs, and chorizo.
New Zealand
Mince and cheese pie is a traditional pie from New Zealand. It is made with a shortcrust pastry shell. The shell is filled with mince and cheese cubes. The mince is prepared with ground beef, onions, garlic, carrots, mushrooms, tomato paste, and beef stock. Oregano, freshly ground pepper, and salt are used for seasoning. The filling is sealed in the pie and baked until golden.
North America
Canada
Salmon pie originated in Quebec. A pie crust is prepared and filled with cooked salmon, mashed potatoes, onions, eggs, black pepper, thyme, and parsley. Once filled the pie is baked until golden.
Pate chinois is a popular dish from Quebec. The name of the dish means Chinese pie. The dish is layered with ground beef, whole or creamed corn, with a layer of mashed potatoes on top.
The US
Grasshopper pie is a popular American dessert. The crust is prepared with chocolate cookies or graham crackers. The gelatin-set cream filling consists of heavy cream flavored with crème de menthe, a sweet mint-flavored liqueur, and melted marshmallows. It is topped with whipped cream and decorated with dark, chocolate shavings.
Buttermilk pie is an old-fashioned pie that originated in the American South. A pie crust is prepared and then filled with a combination of flour, eggs, butter, sugar, buttermilk, vanilla, and some lemon juice. Poured into the pastry shell it is baked until set and then cooled.
Butterscotch pie comes from the Midwest and Southern states. A pre-baked pie shell is filled with a mix of caramelized sugar, butter, milk, and eggs. When done the pie is topped with whipped cream.
Arkansas
Possum pie is a traditional American pie originating in Arkansas. This is a layered pie with the base filled with two layers one of chocolate, the other of cream cheese, vanilla pudding, or sour cream and topped with whipped cream.
California
Chiffon Pie comes from Los Angeles, California. A pie shell is prepared with graham crackers. It has a light, merengue-like filling based on egg whites and flavored with lemon.
Georgia
Georgia peach pie is a classic American pie from the Peach State. A buttery pie crust is filled with ripe peaches, sugar, lemon juice, flour, butter, and egg wash. The pie is baked until golden and bubbling.
Louisiana
Crawfish Pie is a traditional savor pie that originated in Louisiana. A pie shell is prepared and filled with crawfish tails, bell peppers, green onions, garlic, stock, parsley, milk, butter, cornstarch, and seasonings. The ingredients are first cooked until the mixture thickens and then poured into the pie shell. The pie is baked until the crust is golden and the filling is bubbling.
Pennsylvania
Shoo-fly pie is a specialty originating in Pennsylvania. The pie crust is filled with a gooey dark filling made with molasses, brown sugar, and butter. When ready the pie is topped with a crunchy, crumbling topping.
Vermont
Maple cream pie is a sweet pie with a pie crust filled with a mix of maple syrup, egg yolks, brown sugar, vanilla extract, salt, milk, and heavy cream. Once poured into the baked pie shell it is well chilled.
Hawaii
Haupia is a traditional American pie that originated in Hawaii. A pie crust is prepared and baked until golden brown. Then once it has cooled the pie crust is filled with a base of chocolate pudding and topped with whipped cream. Between the pudding and cream comes a layer of haupia which is a gelatinous coconut pudding prepared with coconut milk, cornstarch, and sugar.
South America
Pastel de carne is similar to the well-known Shepherd’s pie. A pastry shell is filled with ground meat, hard-boiled eggs, and topped with mashed potatoes and cheese.
