If you're like me, biscuits are life. Being British, you are basically raised on biscuits as a kid. So it can be pretty rubbish moving to a gluten-free, vegan lifestyle. Well that was three years ago; there are so many to choose from now!
There are times when eating vegan food leaves me feeling like I truly put something good in my body. It’s almost as if my mind, body, and soul is refreshed. This is my altered recipe out of my favorite cookbook, Thug Kitchen: Eat Like You Give a F*ck. Except I won't use quite as much harsh language if any at all. I've actually had to copy recipes out of this book before for my mom, who cries when she hears or sees cuss words, when she wanted to try a yummy vegan recipe.
Walking around the immediate area of the busy Buhre Avenue train station will show you more food options than you can handle. It’s amazing that this area isn’t designated a food hub of the Bronx! I don’t know about you, but Amtrak is one of my favorite ways to travel. Whenever I get the opportunity to travel, it’s the number one service I go to first. I love watching my scenery change from the rush of New York City to the calm and serene of Upstate New York. Traveling long distance by train is most comfortable because of the comfy seating, free accessible bathrooms, and my most favorite feature: the food cart.
As a sweet loving person, Chocolate needs to be on hand for any "I don't want fruit" emergencies. Although I must admit, I'm actually not that much of a "let's eat a Chocolate bar" kind of person. Saying that, when I open the packet it does tend to disappear pretty quickly.
On a beautiful day in NYC, six vegan leaders came together in the back room of VSpot Organic, located on the buzzing street of St. Mark’s Place. Each representing a different organization with different goals, what brought these leaders and the crowd to this Latin vegan restaurant was a commonality of plant-based and/or vegan practices and navigating this culture as people of color. It was an opportunity for everyone involved in these vegan communities to come together once again to uplift, inspire, and find new ways to support.
