Summer Fruits Pimm's Pavlova & Berry Sorbet!

Two yummy desserts!

Our first recipe is Summer Fruits Pimm's Pavlova. This recipe is very straightforward. In total, it will talk around an hour and 15 minutes to two hours to make. So get your big bowl out and your whisk, and let us start baking some cake.

Ingredients for making this recipe:

For the meringue ~

  • 200 ml aquafaba (go check out this recipe to learn what this is a substitute for.)
  • 0.50 teaspoon cream of tartar
  • 270 g caster (superfine) sugar
  • One tablespoon cornflour (cornstarch)

For the pastry cream~

  • One 400ml coconut milk
  • 40 g granulated sugar a pinch of salt
  • 40 g cornflour (cornstarch)
  • 50 g vegan butter
  • 100 ml vanilla plant-based yogurt
  • For the Pimm's syrup:
  • 250 g strawberry jam
  • 100 ml Pimms
  • To decorate~

    • Assortment of summer fruits edible flowers.

    Instructions on how to make this dessert:

    1. Preheat the oven to 100°C/Gas Mark ¼.
    2. Whisk the cream of tartar and aquafaba to stiff peaks. Add the sugar 1 tbsp at a time for 1 minute per spoonful to allow the sugar to dissolve. Finally, add the sifted cornflour.
    3. Draw two 15-20cm (6-8in) circles on two pieces of greaseproof paper. Spread the meringue mix to the shape of the processes and bake for 1 hour. Do this last thing at night and then leave it in the oven to cool overnight, with the range turned off.
    4. For the pastry cream, bring 300ml (1¼ cups) coconut milk, sugar, and salt to a boil. Add the remaining coconut milk and the cornflour and whisk for 5 minutes on medium heat.
    5. Take off the heat and stir in the vegan butter. Cover and leave to cool. When ready to use, whisk through the yogurt.
    6. For the Pimms syrup, blitz the jam and Pimms with a blender, adding more Pimms until the syrup reaches a pouring consistency.
    7. To assemble, place one disk of meringue on a plate and add half of the pastry cream. Place the remaining disk on top and add the remaining pastry cream Drizzle with the Pimms syrup and decorate fruit and flowers.

    Look, we are finished with this beautiful dessert. This alternative for "regular" desserts is very delicious and relatively healthy. Lucky enough, I have a couple of other desserts to share with you. Next, we are going to be making a very easy berry sorbet.

    Ingredients to make this delicious sorbet:

    • Four cups (1 1/4 pounds) raspberries (red, black, or white) or blueberries
    • One cup Simple Syrup for Berry Sorbet (made with two cups sugar)

    Directions on how to make this sorbet:

    1. Put the purée berries and 1/3 cup water in a blender. Pour through a coarse sieve into a bowl. If using blueberries, strain again through a fine sieve. (You should have two cups.) Stir in simple syrup.
    2. Refrigerate until cold, about one hour. Process in an ice cream maker according to manufacturer's instructions, about 25 minutes. Transfer sorbet to an airtight container and freeze until it hardens at least one hour and up to three days.
