For high-quality flower jam, you need flower petals that grow exclusively outside the city. It is better to collect them in the morning, when the dew has already dried, and the sun has not yet entered the zenith. The best weather for collecting flower petals is sunny and clear. Prepare the jam immediately after picking the flowers so that they retain their freshness. First, you should carefully sort out the flower petals, remove damaged, small debris and bugs.

Next, the petals are carefully washed in running water. If you cook jam in a cold way without cooking, then it is recommended to dry the flowers on a clean kitchen towel beforehand.

The cooking process begins with the preparation of sugar syrup, for which it is better to use sugar. The readiness of the syrup is determined simply: a drop of syrup is dropped into a tablespoon. It should keep its shape and not spread. Instead of sugar, you can use natural honey — with it, the jam will turn out more fragrant and will not be candied during long-term storage.

At the next stage, flower petals are added to the syrup and cooked until tender, stirring and removing the foam. Sometimes sugar is immediately combined with water and flower petals — this is a simpler and faster way of cooking. For cooking jam from flower petals, it is better to use a wooden spoon with a long handle.

The color of the finished dessert should match the tone of the flower petals. Keep in mind that when cooking, the petals lose their brightness. That is why at the last stage of cooking, lemon juice is added to the jam, which preserves the natural shade of the bud.

Rose petals 8.82oz

Sugar 21.16oz

Water 1 cup

Sometimes a handful of bright pink rosehip petals are added to the jam. They do not have a special taste, but they add colors to the dessert.

2.How to make dandelion jam

Sunny-yellow dandelion jam resembles honey in color and taste. And if you add a little orange juice to it, you will get a fragrant sweet dessert with citrus notes.

Dandelions 12.35oz

Oranges 1 pc.

Sugar 28.22oz

Water 3 cups

Collect the dandelions. The best time to collect flowers is closer to lunch in clear weather, when they are fully opened.

Sort and wash the flowers under a thin stream of cold water, trying not to wash off the pollen. Dry it on a paper towel. Separate the petals with scissors and start cooking the jam.

Lilac flowers without twigs 2 cups

Sugar 10.58oz

Water 2 cups

Instructions:

Separate the lilac flowers from the green twigs, remove the specks and bugs. Rinse the petals in cold running water, try not to crumple or damage them.

Fill the lilac with water in a jam-making container and put it on a small fire. Bring the broth to a boil and continue to cook for about 20 minutes over medium heat.

Before cooking, sort through the collected flowers and remove dry and wilted buds.

Instructions:

Wash the black elderberry flowers with cold water and sort them out. Remove the dry inflorescences, separate the flowers from the twigs.

Mix the water and sugar in a saucepan, bring to a boil, reduce the heat and cook the sugar syrup for 12-15 minutes.

Add the flowers, mix well and leave for 12 hours. Let the jam preparation infuse. We advise you to cook the syrup in the afternoon, so that it is infused all night.

Sort out the violets, remove all unnecessary: leaves, stems and small debris.

Rinse the petals under a stream of cold water. Put it on a towel and dry it. Transfer the flowers to a small saucepan and mash slightly until a persistent aroma appears.

Lavender flowers 5 tablespoons

Sugar 17.64oz

Oranges 2 pcs.

Water 1 cup

Instructions:

Peel the oranges, cut them into pieces, removing the walls and the white layer.

Pick the lavender flowers, wash them and let them dry on a paper towel. In a saucepan, mix water and sugar, heat and bring to a boil.

Put the orange slices in the syrup, boil for 2 minutes. Let it stand at room temperature for about 1 hour.

Remove the oranges and boil the syrup without them for another 10 minutes. Cool again and then heat the syrup again. This is necessary to obtain the desired density.

Put the oranges back into the jam, add the lavender.

1/2 cup water

Lemon juice 1 teaspoon

Instructions:

Wash the lime blossom. Put the flowers on a towel and dry them.

Bring the water and sugar to a boil. Reduce the heat and cook the syrup until tender for about 10-15 minutes.

Put the lime blossom in the syrup and cook for 10 minutes, stirring with a wooden spoon and removing the foam.

Strain the jam, leaving a few flowers for beauty.

Pour a little lemon juice into the jam and boil for 3 minutes. If there is no lemon, you can replace it with a pinch of citric acid.

Pour into small sterilized jars and close the lids. Store in a cool, dark place.

If you want to get a thicker treat, use pectin. Usually lime jam is served with tea, but you can just dilute it with water and drink it for cheerfulness and good mood!
