My Favorite Cake is Vegan Gluten Free Strawberry Cake! Because Of My Love Of Strawberry's!

About: Strawberry's!! This Amazing Cake is Vegan Gluten Free Healthy Delicious and has very tender Crumb thanks to the Addition of the Strawberry Puree, It's not Overly Sweet, And It's Perfectly Paired With Delicious Strawberry Vegan Butter Cream Frosting!

Equipment:

1. Three 6 Inch Round Cake Pans

2. Immersion Blender, Stand Blender or Food Processor

3. Hand Mix or Stand Mixer

4. Big Mixing Bow

5. Silicone Spatula

Ingredients:

1. 2 1/2 Gluten Free All Purpose Flour

2. 1 Cup Of Cane Sugar

3. 1 Teaspoon of Baking Soda

4. 3 Teaspoons of Baking Powder

5. 2/3 Vegan Butter (Room Temperature)

6. 1/2 Plant Based (Milk Almond, Oat Soy or Rice Milk)

7. 1 Tablespoon of Lemon Juice

8. 1 1/2 Cups of Strawberry Puree (2 Cups of Fresh Strawberry's)

9. 2 Teaspoons Of Vanilla Extract

10. Additional Strawberry's For Garnishing

Baking Directions:

1. Preheat The Oven T0 350 F Degrees/180 c And Line Three 6- Inch Pans With Parchment.

2. Puree The Strawberry's, Useing the Immersion or Stand Blender. Set Aside

3. In A Small Bowel Mix The Vegan Milk With The Lemon Juice to make the Vegan Buttermilk

4. In A Large Bowel, Mix the Vegan Butter Until Pale And Fluffy

5. Sift the Flour, Sugar Baking Soda And Baking Powder.

6. Wisk gently for 30 Seconds to Combine. The Mixture Will Look Crumbly.

7. Add the Plant Based Milk, Strawberry Pure, And Vanilla.

8. Mix On High Speed Until Fully Combined.

9. Divide the Batter Evenly between Three Pans

10. Bake at 350 F 130 C For 25-30 Mins. Remove the Oven Allow to Cool For 15 Mins. Before Unmolding. Let Cool Completely before Frosting.

Butter Cream Frosting Directions:

1. Puree The Strawberry's Then in A Large Bowel Mix The Butter Until Creamy and Pale.

2. Add the Powder Sugar, One Cup at a Time Mix At a Low Speed. And the Strawberry Puree And Vanilla. Mix Until your Butter Cream is Smooth.

3. Once the Cakes are Cooled Frost the Top of each Cake then Stack them. Place in The Freezer for 15 Minutes.

4. Remove from the Freezer and Frost the Sides and Top of the Cake. Decorate with Fresh Strawberry's And Floral!
