Keto Mexican Cauliflower Rice
A Cheesy, Spicy, Taste Bud Tickler!
I love foods that delight all of my senses, and this is one of those. It’s easy to prepare, inexpensive and is a low carb comfort food. This only has 9 g of carbs (4 g of net carbs) per serving! Every Keto follower’s dream dinner!

This dish is a ooey, gooey, cheesy delight with just enough zip from the garlic and spices. (No meal is complete without the proper spices!) This is a very filling and satisfying meal. You won’t be hungry an hour later, I promise!
I absolutely love Mexican food, especially rice. However, a few years ago, menopausal (and all the good stuff that goes with it), I started gaining weight. I learned that I am one of those people that can’t metabolize carbohydrates well. I Jumped on the Keto bandwagon and lost 65 pounds. This was fantastic, until it wasn’t. The weight slowly started creeping back on. So I figured out that completely trying to eliminate a whole macro wasn’t the answer, I upped my carbs a bit and now I’m modified Keto. I feel better and there is even more flexibility in the food realm.
This recipe has the flavor and texture of the real deal, without the empty refined carb calories. The overall calories are low too, so if you are especially hungry, have two servings! As long as they fit in your daily macros.
My ingredients are organic, wherever possible. Meat should be organic, and grass fed. I feel they offer better nutrition, taste better and are better for the environment. I like to keep things simple, so I mix all of the ingredients in a large bowl then place all of the ingredients into a casserole dish, cover and pop in the oven.
Servings: Makes 4
Cookware Required: Skillet, Large Mixing Bowl, Covered Casserole Dish
Prep Time: 15 Minutes
Cooking Time: 30-35 Minutes
Total Time: 45-50 Minutes
Cooking Temp: 350 degrees F (adjust for altitude and stove idiosyncrasies)

Ingredients
1 Pound Organic, Grass Fed Ground Beef
1 Clove of Garlic (pressed)
1 12 oz bag of Organic Frozen Riced Cauliflower
1 Tbsp Organic Olive Oil
½ Cup Organic Salsa
¾ Cup Full Fat Shredded Cheddar (save ¼ cup for the top)
1 tsp Onion Powder
¾ tsp Paprika
¾ tsp Turmeric
Salt and Pepper to taste
Directions
Step 1:
Take ground beef and brown in skillet
add garlic to the pan near the end and cook for about a minute to let flavors blend when finished place beef and garlic in a large mixing bowl
Step 2:
Add to the meat and garlic, the remaining ingredients and mix well. You want to be sure all the ingredients are completely incorporated. There is nothing more unsavory than getting a mouthful of turmeric. (I’ve done it! Ew)
Put in a covered casserole dish and Bake 350 degree F
30 min or until cheese is melted
Remove from the oven and enjoy!
You can top with some Organic Full Fat Yogurt. I used 1 Tbsp. Just remember to account for it in your macros as I did not include it here.
