Ingredients:

For the marinade:

500 grams mutton, cut into pieces

1 cup yogurt

2 tablespoons ginger-garlic paste

1 tablespoon red chili powder

1/2 teaspoon turmeric powder

Salt to taste

For the rice:

2 cups Basmati rice

4 cups water

1 bay leaf

4-5 green cardamom pods

4-5 cloves

1-inch cinnamon stick

Salt to taste

For the biryani:

3 tablespoons ghee or oil

2 large onions, thinly sliced

2 green chilies, slit lengthwise

1 tablespoon ginger-garlic paste

1/2 teaspoon turmeric powder

1 teaspoon red chili powder

1 teaspoon biryani masala powder

1/2 cup chopped mint leaves

1/2 cup chopped coriander leaves

Saffron strands soaked in milk (optional)

Fried onions for garnish (optional)

Instructions:

In a large bowl, combine the mutton pieces with yogurt, ginger-garlic paste, red chili powder, turmeric powder, and salt. Mix well and let it marinate for at least 2 hours or overnight in the refrigerator.

Wash the Basmati rice under running water until the water runs clear. Soak the rice in water for 30 minutes, then drain.

In a large pot, bring 4 cups of water to a boil. Add the soaked and drained rice, bay leaf, cardamom pods, cloves, cinnamon stick, and salt. Cook the rice until it is 70-80% cooked. The grains should still have a slight bite to them. Drain the rice and set aside.

In a separate large, deep pan or pot, heat ghee or oil over medium heat. Add the sliced onions and green chilies. Sauté until the onions turn golden brown.

Add the ginger-garlic paste and sauté for a minute until the raw smell disappears.

Add the marinated mutton pieces to the pan and cook until the meat is browned on all sides.

Add turmeric powder, red chili powder, biryani masala powder, and salt. Mix well to coat the meat with the spices.

Cover the pan with a lid and cook the mutton on low heat until it is tender. This may take about 1 to 1.5 hours, depending on the meat. If needed, you can add a little water during the cooking process to prevent it from drying out.

Once the mutton is cooked, remove half of it from the pan and set it aside. This will be used for layering.

Layer half of the partially cooked rice over the remaining mutton in the pan. Sprinkle half of the chopped mint leaves and coriander leaves over the rice.

Layer the reserved mutton over the rice, followed by the remaining rice. Sprinkle the remaining mint leaves and coriander leaves on top. Drizzle saffron milk over the rice for added color and flavor.

Cover the pan with a tight-fitting lid and cook on low heat for 20-25 minutes. This will allow the flavors to meld together and the rice to fully cook.
