Gluten free Egg in a Hole

As a child, one of my favourite treats was something called "Egg in a Hole", a classic breakfast dish made by cutting a hole in a slice of bread and cracking an egg into the hole before frying it up. However, as an adult with Celiac, many of my favourite comfort foods are no longer accessible to me. It takes a lot of creativity to adapt traditional recipes to be gluten-free, but I recently had an "aha" moment that led to the creation of a new twist on Egg in a Hole: Bell Pepper Egg in a Hole.

The idea came to me when I was cutting up some peppers for a stir-fry. I realized that the pepper rings would make the perfect mould for an egg, creating a visually stunning and delicious breakfast dish. I'm sure this concept has been done before, but I still feel proud of my ingenuity in coming up with the idea on my own.

To make Bell Pepper Egg in a Hole, you will need the following ingredients:

Oil

One large Bell Pepper, cut into rings, a half inch in width. make sure to leave the rings intact.

4 eggs

Salt and pepper

Begin by heating some oil in a pan over medium-high heat. While the oil is heating up, slice the bell pepper into 1/2 inch rings and remove any seeds or white pith from the centre.

Once the oil is hot, carefully place the pepper rings into the pan. Crack one egg into each ring and season with salt and pepper. Allow the eggs to cook for 2-3 minutes, or until the whites are set and the yolks are still runny. Gently flip the peppers and eggs over and cook for an additional 1-3 minutes, depending on how well done you prefer your yolks.

When the eggs are cooked to your liking, remove the peppers from the pan and serve while still warm. The beautiful colours of the peppers and eggs make this dish a feast for the eyes, and the combination of the slightly sweet, slightly bitter flavour of the peppers with the rich, creamy egg yolks is simply delicious.

One of the great things about Bell Pepper Egg in a Hole is that it is incredibly versatile. You can experiment with different spices and seasonings to create new flavour combinations or add some shredded cheese or diced bacon to make it even more indulgent. You can also try using different colours of peppers, such as yellow or orange, to create a more vibrant presentation.

Notes

The pepper you choose can be any colour. There isn't really a difference in taste between the various colours of bell pepper. The contrast between the colour of the pepper and the cooked egg looks nice no matter what colour you use.

If you accidentally cut your rings, it happens. Overlap the ends by a small amount and secure them with a toothpick before cracking the egg into it.

I usually have large eggs on hand. I am not sure if medium eggs would fill the pepper ring. Small eggs probably would not fill them entirely.
