Egg & Hashbrown Casserole

On Sunday, there was a very intense discussion that I was having with my boyfriend: what we should make to take to work in our lunches all week. After weeks of eating the same meal for lunch every day, he was getting bored with his usual go-to choice and wanted something a bit different. We both usually like to make something big so it lasts all week and doesn’t leave us without a lunch. After much debate over the merits of a variety of foods, I had an epiphany: a casserole. Only, what kind of casserole? I didn't want to make the same old casserole. I wanted something new. Something exciting. Something that didn't take all day to make. I spent a lot of the day researching different types of casseroles. Frankly, they all looked delicious.

When I realized that eggs were on sale at a nearby grocery store, the choice became clear. I threw this recipe together in no time. It’s very simple to make, there's very little mess, and it creates a delicious meal which checked every box on my check list.

Now any veggie or meats can be substituted to the ones that I have used. Heck, the ones I used can be replaced all together to any meats and veggies that you prefer. I only used what I had on hand at the time but I found that they blended well together. I had used frozen spinach but thought that it still maintained a good consistency within the recipe. It also served as a great time saver.

I also didn't list any particular cheese as most cheeses works well with this recipe. For anyone curious, I used mozzarella cheese.

The great thing about this recipe is that it can be eaten for any meal. Obviously it's a traditional breakfast dish, often great for holidays when there's a big gathering of people, but it's also great as a light lunch or supper. There's nothing like having breakfast for dinner. It can bring out the inner child in all of us.

With lunch time for the work week all taken care of, it can sure take a load off my mind knowing that every morning before work won't be a rush of do I have time to pack a lunch or should I buy it today? Definitely a time and a money saver.


  • 8 eggs
  • 1/2 cup of flour
  • 1 1/2 cups of milk
  • 1 cup of turkey (cubed)
  • 2 cups of cheese (shredded)
  • 1/2 cup of onion (diced)
  • 1 cup of spinach (chopped)
  • Frozen hash brown patties
  • butter/margarine/cooking spray to coat the baking dish


  1. Preheat oven to 350 degrees.
  2. Finely coat your 9 by 13 casserole dish.
  3. Line the bottom of your casserole dish with the frozen hash brown patties. If there's a little bit of space at the end of the dish break a hash brown patty in half to fill more of the dish.
  4. Layer the turkey onto the top of the hash browns, spreading it out evenly.
  5. Layer the spinach and onions on top of the turkey, spreading them out evenly.
  6. Layer the cheese on top of the spinach and onions, spreading it out evenly.
  7. In a separate bowl, whisk together the milk, flour, and eggs. Do this until there is a smooth texture and the egg yolks are mixed completely into the mixture. This step gives the eggs that extra creamy texture.
  8. When the mixture is well blended pour evenly on top of the hash browns, meat, cheese, and veggies.
  9. Bake for 1 hour.
  10. Enjoy.
