It seems at least one a week I am baking something. Whether trying out something new or making an old classic I find baking to be a relaxing and enjoyable task. These cookies are definitely an old classic and the fact that they only contain three ingredients is even better. In fact these ingredients are something that I generally always have on hand so it definitely makes the recipe a go to in my household, not to mention the fact that my spouse is a peanut butter fiend.

Almost everyone I know loves peanut butter cookies, in fact these cookies are so good that I've had requests from friends and family to bake them whenever an event is approaching. Which makes how quickly these cookies come together a game changer when getting ready for events last minute. Of course they're not always made last minute but when you're in a time crunch it sure does help. Once I remember having to make a second batch last minute because my spouse at them all before the event happened. I was very glad that they a quick and easy to make in that situation!

There's so many things I like about this recipe. The quickness, the easiness, the fact that there's very little clean up thanks to having few ingredients. Measuring cup, mixing bowl, spoon, fork and a baking sheet are all that are used, which leaves a very quick clean up. In fact I bet you can have your materials cleaned up and put away before the cookies are even done baking! (Except the baking sheet of course)

These are maybe the easiest cookies that I know how to make, which makes them a winner in my books. Of course baking is fun but getting to eat those treats that much faster is great. More time to spend with friends or family while enjoying the baking is always a plus. One of my favourite memories as a child was baking with my mother, you can bet she would have loved an easy recipe like this. Quick, simple and rewarding.

The forks aren't essential for flattening down the cookies, a spoon can be substituted but there's nothing like fresh baked peanut butter cookies with the class fork criss cross pattern on it. It just adds to the look. Of course tastewise they'd be the same either way so the choice is yours but I'm a sucker for a classic.

A little amusing side story about these cookies. I once forgot to return a co-worker's keys and made these cookies as an apology for delaying him at work. The next day he told me he was hoping I had forgotten to return the keys again so I would bring some more cookies because they were so good. Little did he know that the cookies are so simple and quick that I baked them before coming into work that morning. There was also enough cookies for my family to enjoy as well as for my co-worker to enjoy. It's almost a dirty little secret at how quick and easy these cookies are to make. A secret that is well worth sharing.

Ingredients

1 cup of peanut butter

1 cup of white sugar

1 egg

Directions

1. Preheat oven to 350F

2. Line baking sheet with either parchment paper or aluminum foil

3. Combine peanut butter and sugar

4. Mix thoroughly

5. Add egg

6. Mix until smooth

7. Place balls of dough onto baking sheet

8. Using a fork to flatten cookies (remember to leave a little space between the cookies as they do grow while baking)

9. Bake for 8 minutes

10. Let cool

11. Enjoy
