Dune Pancakes and Waffles
The Spice Must Flow
This is a recipe I use for my husband who is diabetic. I don’t use any sugar in these pancakes. I call them Dune pancakes because Dune is my husband’s favorite movie. The one from 1984 not the one that just came out. They are delicious and go great with beacon and sausage. We are both gamer nerds and I love making food that remind us of our favorite hobby. I love making these before or during a gaming session or watching The Gamers movie. Or watching the old Dune movie because the spice must flow.
Dune Pancake Recipe
2 cups flour-All-purpose flour, whole wheat flour, almond flour, gluten free flour, and sprouted flour.
4 oz salt
3 teaspoons baking powder
2 tablespoons spice-I use Awesome Country spice.
3 tablespoons melted butter
1 1/2 cups milk
2 eggs
You could add beacon bits or sausage crumbles to the batter.
Sausage Gravy
1 pound of breakfast sausage, hot or mild
1/3 cup all-purpose flour
3 to 4 cups whole milk
1/2 teaspoon salt
2 teaspoons freshly ground pepper
Brown the sausage in a skillet over medium heat, reduce heat to low. Sprinkle half the flour and stir till soaked up. Pour in milk and stir consistently till thick. then add salt and pepper.
In a medium bowl I mix the dry ingredients together flour, salt, and spice. In a separate bowl I melt the butter in another bowl, beat the eggs with a mixer. I then mix all the dry with the melted butter, eggs, and milk together with a whisk till smooth.
On a preheated large frying pan or gridle use cooking spray or melted butter. Use a scoop or soup latte and poured desired size. Let it cook till you see bubbles then take a spatula and flip. Cook for two minutes then flip. Keep cooking for two minutes at a time till done.
I like to serve these with butter and sausage gravy. With coffee and juice. These are great for breakfast or dinner. I’ll make these for my dungeons and dragons' group, and they love them. Sometimes though we are craving waffles instead of pancakes.
Dune Waffle Recipe
Preheat waffle iron while mixing the ingredients.
2 cups four
1/2 cup melted butter
1 3/4 cups milk
2 eggs
1 tablespoon spice
4 teaspoons baking powder
1/4 teaspoons salt
1 teaspoon A1 steak sauce
Mix dry ingredients flour, salt, baking powder, and spice together in a medium bowl then beat the eggs in a separate bowl with a mixer. Combined the milk, eggs, melted butter, and steak sauce in the bowl with the dry ingredients with a whisk till blended smooth. Let it sit for a few minutes before putting in the waffle iron. Use cooking spray in the waffle iron, use a scoop to put into the waffle iron. Cook until golden brown, serve with beacon and sausage. Also goes really well with chicken tenders as a sandwich.
Last time I made these was for a New Year's Eve party and the Theam was chicken and waffles. We figured waffles would be good for soaking up alcohol. We ordered chicken from a local barbeque restaurant, and I made the waffles to order. We set up a table with all the fixings, maple syrup, whipped cream, nuts, mms, and beacon. We played board games all night long including Cards Against Humanity. We had our guests spend the night so no one drove home under the influence. Next morning, we had pancakes with the rest of the chicken and made mimosas. It was a fun and flavorful night.
