I've been eating fish sandwiches ever since I was a kid. When I was younger, my mom would make me grilled fish sandwiches with tartar sauce and lettuce on a toasted whole wheat bun. The bread was always dry and grainy, but that didn't stop me from wolfing it down in seconds! As an adult, I find myself gravitating toward fried fish sandwiches instead of grilled ones. They're crispy and fresh-tasting—the kind of thing you want when it's hot outside or when you're craving comfort food. This recipe takes less than 10 minutes to make (and only requires one pot!). It's also vegan-friendly if you want to skip the mayo; use veganaise instead!

So, I'm about to let out a TMI, You ready for it?

3,2,1…

It's that time of the month… UGHHH!

I'm sitting here at my work desk, feeling my body change, writing an article, and working on getting 11,000 people employed through my employment agency then I saw my dad come home with food. I don't know what on earth I was expecting but I know for a fact I was not expecting what he gave me… A fish sandwich. 

Now, it made me think. A fish sandwich is one of these things that you don't know you need until you get it. And when it's that time of the month, any comfort food is NECESSARY. So today, that is what we will be talking about, "Crispy Fish Sandwich: The Ultimate Comfort Food"

Crispy fish sandwich is a popular comfort food that many people enjoy, especially during their menstrual cycle. Here are a few facts about it:

  1. Fish is a great source of omega-3 fatty acids, which can help reduce inflammation and cramps that some people experience during their menstrual cycle.

So how do we make one (or two)?

1st Recipe

  • 1 cup milk (I recommend whole milk)
  • 2 cups flour
  • 1/4 teaspoon baking powder
  • 3 eggs
  • 1 teaspoon salt
  • 2 pounds whitefish fillets (cod works well in this recipe)

Ingredients (For 4 Sandwiches)

The following ingredients are for 4 sandwiches.

  • 2 cups flour
  • 1 cup cornmeal
  • 1 tsp. salt
  • 1 tsp. black pepper
  • 1 tsp. cayenne pepper (optional)

In a large mixing bowl, combine the flour and cornmeal with a whisk until well combined. Add in salt, black pepper, and cayenne pepper if you like some spice! Add in eggs and milk and stir until just smooth enough to knead on your countertop or cutting board. You don't want it too soupy but not too dry either! If needed add more flour or water as needed until you reach a consistency that will work for breading fish fillets.

Instructions

  • Heat oil in a frying pan on medium-high heat.
  • Place fish fillets into the heated oil and cook until golden brown, about 2 minutes per side (you may need to do this in batches).
  • Remove from the pan and drain on paper towel for 30 seconds or so to allow excess grease to drip off before placing them on your sandwich bread or taco shell of choice!

2nd Recipe

Ingredients:

  • 4 (4 oz) white fish fillets (such as cod or haddock)
  • 1 cup all-purpose flour
  • 2 eggs, beaten
  • 1 cup panko breadcrumbs
  • 1 tsp paprika
  • 1 tsp garlic powder
  • Salt and pepper, to taste
  • Canola oil, for frying
  • 4 sandwich buns
  • Lemon wedges, for garnish
  • Tartar sauce, for serving (optional)
  • Lettuce or coleslaw, for serving (optional)

Instructions:

  1. Prepare the fish by seasoning it with salt and pepper.
  2. In a shallow dish, mix together the flour, paprika, and garlic powder.
  3. In another shallow dish, beat the eggs.
  4. In a third shallow dish, mix together the panko breadcrumbs.
  5. Dip each fish fillet in the flour mixture, then into the beaten eggs, and finally into the panko breadcrumbs, making sure that the fish is evenly coated.
  6. Heat the canola oil in a large skillet over medium-high heat.
  7. Once the oil is hot, carefully place the breaded fish fillets into the skillet. Fry the fish for about 3-4 minutes on each side, or until the fish is golden brown and crispy.
  8. While the fish is frying, toast the sandwich buns.
  9. Once the fish is cooked, remove it from the skillet and drain it on a paper towel-lined plate.
  10. To assemble the sandwiches, place a fish fillet on the bottom of each bun. Top with tartar sauce, lettuce or coleslaw, if desired.
  11. Serve the sandwiches warm, with a lemon wedge on the side, and enjoy your crispy fish sandwich!

Now, if you tried any of these recipes, please let me know. The one I had today was filled with onions in the sauce that I gagged at (Yes, I HATE onions + You know what) So trying again, I would not do one with that much onions, I'd probably replace with pepper.
