Apple and pineapple mocktail
Delicious and refreshing: Two ingredients only

This is truly two ingredients only, unlike the misleading YouTube videos that tell you the recipe is only two ingredients, you fall into the trap, watch the video, and you find out you actually need five things to make it.
So, this is a two ingredient mocktail. What's not to love about a delicious mocktail! I am calling this mocktail because I don't know what to call it but I think it looks pretty in a cocktail glass with a glass straw (because sustainability). If you make it and for you it's better to call it a juice, a soup, a sauce, a shake, or simply just a drink go ahead and let me know what you called it. The most important is to have fun with anything you create.
I have to confess, this new made up recipe was rather accidental, which made it a lot of fun. I bought a tin of sliced pineapple and vanilla ice-cream on Friday. I was planning on having pineapple with vanilla ice-cream on top, which I did, once. That used only two slices of pineapple and some ice-cream. Later that same day, I finished the rest of the ice-cream, without the pineapple.
This morning, I looked at the rest of the pineapple wondering what could I make with it. Ahh, pineapple smoothie! I thought. Although I didn't have any almond milk or any other species milk alternative for that matter. I thought about using water, but it sounded plain boring and due to science and the laws of physics, the water separates from the pineapple pulp and I don't like it. I opened the fridge again to see what I had. An apple! I thought, rather excited. I had one single apple sitting there all alone. Apple and pineapple should certainly be a good combination. After first thinking about putting them in the microwave, I changed my mind. I decided to blend them into ... something.
Let's see ... what a recipe for this should look like.
First, the ingredients:
- 1 tin of sliced pineapple in its juice
- 1 red apple, sliced
Technology used:
It's not a blender what I used but works like a blender. A food processor perhaps? It has a blade in it, like blenders do. Manufacturers tend to make things that in fact, are the same as some other products, they only change the shape or size of it and call it something different so you buy lots of kitchen electronics that do the same thing. I have one blender and I use it for everything.
As you know, any time I am in a kitchen is to make up stuff. This time, I am in someone else's kitchen, Mochi the cat's kitchen.

So, just use whatever you have available, like I did. After all, you can't own every single thing they sell, especially if you are trying to become a minimalist as I am trying to do. It's hard. I'll get there. Anyway, enough talking. You will need:
- 1 glass
- 1 glass straw
How to make the delicious and easy mocktail:

I can assure you, this was delicious and ready in just a few minutes. This is what you need to do:
1. Put the pineapple slices and all its juice into a blender (or whatever does the same job)
2. Peel and slice the apple, add it into the blender
3. Blend until it's smooth, very smooth
4. Poor into a pretty cocktail glass or any glass you want. Add a straw if you wish. Put it into the fridge for at least one hour; it's more delicious when it's cold and a little more consistent, it depends on your taste. You need to experiment
5. Enjoy!
6 Alternatively, you could make this with your favourite milk or milk alternative if you prefer a more liquid consistency. This is going to to be on the cremy side but I liked it like that. I also put some of it into a small container and then into the freezer for about 20 minutes. I took it out, it was delicious.
That's it! It really can't get easier than that. The resulting drink is super delicious, refreshing, and packed with vitamins to keep you healthy. Enjoy!
A/N: I also forgot to mention that I was in the mood for something nice, like a sweet treat. This comes to show that if you open your fridge, stare inside for a while, and put your imagination at work you can make something good out of just whatever you have available in your fridge. :)
