Recipe for Ras Malai.

Ingredients:

  • 1 liter whole milk
  • 2 tbsp lemon juice
  • 2 cups water
  • 1 cup sugar
  • 4-5 green cardamom pods
  • 1 tbsp rose water
  • 2 cups heavy cream
  • Sliced almonds and pistachios for garnish

Instructions:

  • In a large pot, heat the whole milk until it starts to boil.
  • Add the lemon juice to the milk and stir gently. The milk will start to curdle.
  • Keep stirring gently until the whey separates from the curdled milk.
  • Once the whey is completely separated, turn off the heat and strain the curdled milk through a muslin cloth.
  • Rinse the curdled milk under cold water to remove any lemony flavor.
  • Squeeze out as much water as possible and hang the curdled milk for at least an hour to remove excess water.
  • After an hour, remove the curdled milk from the cloth and knead it into a smooth dough.
  • Divide the dough into small, equal-sized balls.
  • In another pot, add 2 cups of water, 1 cup of sugar, and 4-5 green cardamom pods.
  • Bring the sugar syrup to a boil and add the dough balls to it.
  • Cover the pot and let it cook on low heat for about 15-20 minutes.
  • Once the dough balls have doubled in size, turn off the heat and let them cool down in the syrup.
  • In a separate pot, heat 2 cups of heavy cream until it starts to thicken.
  • Add 1 tbsp of rose water to the cream and stir well.
  • Take the dough balls out of the sugar syrup and squeeze out any excess syrup.
  • Add the dough balls to the thickened cream and let them soak for a few hours in the fridge.
  • Garnish with sliced almonds and pistachios before serving.
