Ingredients:
- 1 cup besan (gram flour)
- 1/4 cup rice flour
- 1 tsp red chili powder
- 1/2 tsp turmeric powder
- 1/2 tsp cumin powder
- 1/2 tsp coriander powder
- 1/2 tsp garam masala powder
- 1 tsp salt, or to taste
- 1/2 cup water, or as needed
- 2 cups of vegetables (e.g. onions, potatoes, spinach, eggplant), sliced thinly
- Oil, for frying
Instructions:
- In a mixing bowl, combine the besan, rice flour, red chili powder, turmeric powder, cumin powder, coriander powder, garam masala powder, and salt. Mix well.
- Gradually add water to the mixture, stirring continuously until you have a smooth batter. The batter should be thick enough to coat the vegetables.
- Add the sliced vegetables to the batter and mix well, making sure each piece is coated evenly.
- Heat oil in a deep pan over medium-high heat. Drop spoonfuls of the vegetable mixture into the oil, being careful not to overcrowd the pan.
- Fry the pakoras for a few minutes on each side, until golden brown and crispy. Remove from the oil with a slotted spoon and drain on paper towels.
- Serve hot with chutney or sauce of your choice.
