DEEP-FRIED DESSERT.

Ingredients:

  • 1 cup milk powder
  • 1/4 cup all-purpose flour
  • 1/4 tsp baking powder
  • A pinch of salt
  • 3 tbsp ghee or melted butter
  • 1/4 cup milk (or as needed)
  • Oil or ghee for deep frying
  • For the sugar syrup:
  • 1 cup sugar
  • 1 cup water
  • 4-5 cardamom pods (crushed)
  • A few strands of saffron (optional)
  • 1 tsp rose water (optional)

Instructions:

  • In a mixing bowl, add milk powder, all-purpose flour, baking powder, and salt. Mix well.
  • Add ghee or melted butter to the mixture and mix it well with your fingers until it forms a crumbly texture.
  • Add milk little by little and knead it to make a smooth and soft dough. Do not over-knead the dough.
  • Divide the dough into small balls and roll them between your palms to make smooth balls.
  • Heat the oil or ghee in a deep frying pan over medium heat.
  • Once the oil is hot, add the balls to the pan in batches and fry them until they turn golden brown. Make sure to stir them occasionally for even frying.
  • Remove the fried balls using a slotted spoon and drain the excess oil on a paper towel.
  • To make the sugar syrup, add sugar, water, crushed cardamom pods, and saffron (if using) to a pan and bring it to a boil. Let it simmer for 5-7 minutes until the sugar dissolves and the syrup thickens.
  • Remove the pan from the heat and add rose water (if using) to the syrup.
  • Add the fried balls to the sugar syrup and let them soak for at least 1 hour or until they absorb the syrup and become soft.
  • Serve the Gulab Jamun warm or chilled, garnished with chopped nuts if desired.
