Venison Cheddar Biscuits are soft, flaky, buttery golden brown buttermilk biscuits infused with venison sausage and cheddar cheese. The biscuits are a complete meal and are perfect for any time of the day. Take one on your way out to work, have one for lunch, or make a batch for dinner.

If you don't have venison sausage, you can use pork, turkey, or any other type of sausage. You could even use bacon or diced ham instead of sausage. If you want meatless, that's fine too. Just fix the recipe according to the directions, but leave out the meat.

Equipment Needed

  • Frying pan
  • Large cookie sheet or baking tray
  • Spatula or utensil to break up the sausage
  • Sifter
  • Large bowl
  • Measuring spoons (1/2 teaspoon, tablespoon)
  • Measuring cups (1/2 cup, 3/4 cup, 1 cup, 1 1/2 cup)
  • Pastry cutter or fork
  • Cutting board
  • Dough roller
  • Biscuit cutter
  • Pastry brush
  • Cooling rack

Venison Cheddar Biscuits Recipe

Ingredients:

  • 4 cups of self-rising flour
  • 1/2 teaspoon of cayenne pepper
  • 1/2 cup vegetable shortening
  • 2 cups venison sausage, fried and grease removed
  • 3/4 cup of shredded Cheddar cheese
  • 1.5 cups of buttermilk
  • Cooking spray
  • 2 tablespoons of melted butter (optional)

Getting It Done:

  1. Fry the venison sausage in a frying pan preheated to medium heat, breaking it up with a spatula as it fries. Then drain the excess grease if needed.
  2. Preheat the oven to 350°F and sift the flour in a large bowl. Add cayenne pepper and mix well.
  3. Add shortening and cut it into crumbs with a pastry cutter or fork. Then add the venison sausage and cheese and mix. Now add the buttermilk and mix very well.
  4. Place the dough on a floured cutting board. Knead it 3-4 times and then roll the dough to 3/4″ thickness all around.
  5. Cut all of the biscuits out using a biscuit cutter or glass cup. Continue until all dough is used.
  6. Place on a large cookie sheet sprayed with cooking spray, and bake until the tops start to brown, about 8 minutes.
  7. Remove from the oven, brush with melted butter and place back in the oven just long enough for the tops to brown slightly.
  8. Remove from the oven and place the biscuits on a cooling rack.
  9. Let's eat!
