Travelling, either by car, train or plain can be quite stressful without any prepared snacks. You can’t always rely on supermarkets, stores or cafes for food, so it’s better to always be ready for different situations. Most articles would recommend sandwiches, sliced fruit, crackers, and pasta salads as travel meals. But what about something delicious and comforting like homemade cookies? They are easily made in batches and then transferred in air-tight containers for a couple of days. So what are you waiting for? Try out these three cookie recipes and find out your favorite!

Vegan treats have been on the rise of popularity in bakeries and cafes. But the process of making them at home has also become easier with all the different vegan versions of baking products available everywhere. So these coconut cookies are a breeze to bake right now. Their rich tropical flavor and soft inside will please everyone. And they can be stored away for quite a long time.

Cream together vegan butter and sugar, then add vanilla and the secret ingredient—coconut extract. It may be harder to find in some places, but it is worth the hassle. Then mix the dry ingredients, add butter and any plant-based milk. Bake until firm on the edges but soft and chewy in the middle. Beat butter and sugar with an electric mixer until completely smooth and add one egg. Slowly add in the flour mixture and then mix in the oats and chopped apples. Refrigerate for at least half an hour or the dough will be too sticky and soft to handle properly. Afterwards scoop it out on a baking tray and bake for 12 minutes. Let them cool down completely and enjoy with a nice cup of tea. These cookies are especially great for traveling during the fall because of their spicy aroma and delicate apple flavor.
