Ma Po Tofu


2 pieces of southern tofu, 200 grams of pork, 1 spoon of soy sauce, 1 small spoon of sugar, 2 spoons of Pixian bean paste, 1 small spoon of black bean sauce, 1 small spoon of salt, half a bowl of water starch, 1 chopped green onion, 3 grams of pepper powder


1, the pork is washed and chopped into minced meat, and the green onion is washed and chopped

2, tofu cut into small cubes and put into a large bowl, pour water over the tofu, then add a small spoon of salt soaked for more than 5 minutes and then drained out for use

3, start a pot, pour an appropriate amount of oil into the pot and heat, pour the minced meat into the first stir-fry cooked brown, then put the bean paste and black bean paste into the stir-fry together aromatic

4, then pour 2 bowls of boiling water to boil, pour the tofu block into it, add soy sauce and sugar and cook for 3 minutes on high heat, add pepper and pour half a bowl of water starch to thicken, continue to cook on high heat

5, to be thickened soup can be served, out of the pot sprinkled with green onions can be eaten!

Crispy Tofu

Ingredients: 300g lactone tofu, 20g oil, 10g garlic cloves, 40g cornstarch, 15g soy sauce, 14g chili sauce


1, prepare the lactone tofu, tofu rinse with live water, cut thick slices; garlic cloves patted and finely diced; starch mixes well with water and set aside. Tofu slices are evenly coated with dry starch on both sides.

2: Heat oil in a pan and add the tofu covered with cornstarch. Fry over medium heat until both sides are crisp and brown, and set aside. In the remaining oil in the pan, stir-fry garlic, add fresh bean and chili sauce, and stir-fry well.

3. Drizzle in the cornstarch sauce and soy sauce to make a good sauce. Drizzle the sauce over the tofu.

Clams with green onion oil

Ingredients: 300g clams; 20g green onions; 10g shredded ginger; 5g millet pepper; 2 tablespoons of soy sauce about 30g; 1 tablespoon of cooking wine about 15g; 1 small spoon of sugar about 5g

Steps to do.

1, hands before the most important work, is to let the clams spit clean sand. Washed clams soaked in lightly salted water, after 2 to 3 hours can be.

2, soak clams when we can prepare the sauce, first shredded ginger, chopped pepper, and chopped green onion.

3, take a small bowl, put the shredded ginger, minced garlic, and pepper, and pour 1 tbsp of cooking wine, 2 tbsp of soy sauce, and 1 tsp of sugar, and mix well.

4, boil a pot of water and put the clams into the hot. All open shells immediately after fishing out. Do not overcook, or the clam meat will shrink!

5, immediately just mix the sauce poured on the clams, sprinkled with small minced onion. Do not be stingy, sprinkle a little more to taste ah; then immediately heat a little oil, and drizzle directly on top of the clams!

Pork trotters with tea

Ingredients: pig's feet, wine, tea, brown sugar, white sugar, onion, ginger, salt, chicken essence


1. remove the hair and chop the pig's feet into small pieces, put them into a pot of cold water and boil, skim off the foam, fish out and set aside

2. onion cut into sections, ginger cut into a pot of oil, the oil is hot, put brown and white sugar stir-fried into sugar color

3. then add red wine, green onion, ginger, tea leaves, water, and pig's feet into the pot

4. boil over high heat, boil and then change the heat to low stew, when the pig's feet are almost cooked put salt to taste and cook until the soup is almost dried up and can be removed from the pot.

Steamed egg with shrimp


3 eggs, 12 prawns, 1 pinch of salt, chopped green onion, 1 tsp of soy sauce, a few drops of sesame oil

1: peel off the shell of the shrimp, pick off the sand and threads, clean and drain the water and set aside

2: eggs with a little salt beaten, add eggs 1.5-2 times the amount of water, generally 3 eggs I put 250ml of warm boiling water, mix well

3: the egg mixture with a spoon to filter once, to make the egg custard more delicate, wrap the plastic wrap on the pot on high heat and steam for about 8 minutes

4: When the surface of the egg mixture solidified, put shrimp, and scallions and continue to steam for about 5 minutes

5: Mix the soy sauce and sesame oil with a little warm water and pour over the egg mixture.

Stir-fried beef with cilantro

Ingredients: appropriate amount of beef, an appropriate amount of cilantro, an appropriate amount of ginger, an appropriate amount of soy sauce, appropriate amount of cooking wine, appropriate amount of red pepper, an appropriate amount of egg whites, an appropriate amount of black pepper, an appropriate amount of salt, an appropriate amount of garlic.


1. beef shredded willow, add a small amount of egg white, black pepper, salt, cooking wine, and ginger marinated for half an hour.

2. frying pan hot, pour in the marinated shredded beef, and stir-fry until the beef color is mature.

3. stir-fry the beef from the pot, pour oil into the pot and put shredded ginger, chili, and garlic bursting.

4. pour in the first stir-fried beef tenderloin, continue to stir-fry, pour two tablespoons of soy sauce and five tablespoons of water, and simmer for a while.

5. pour in the cut cilantro, turn off the heat, and stir-fry evenly.

Mussel meat

Peppery Chicken Wings

Ingredients: lean pork, eggs, dried fungus, cucumber, carrots, salt, soy sauce, cooking wine, oil, sesame oil


1, cut the lean pork into shreds; knock the eggs into a bowl and beat well with chopsticks.

2、Soak dried fungus in boiling water for 5 minutes, remove the roots and tear into pieces; cut cucumber and carrot into shreds; cut green onion and ginger into shreds.

3: Heat oil in a wok, add eggs and scramble them into small irregular pieces and put them on a plate.

4, pan leftover oil, add shredded meat into the stir-fry, the meat becomes white, add onion, ginger shredded stir-fry, to 80%, add wine, soy sauce, salt, stir-fry well, add fungus, cucumber, carrot and egg pieces stir-fry, cooked and drizzled with sesame oil.

Braised lion's head

Ingredients: minced pork, bok choy core, water chestnuts, whole wheat toast, onion, ginger, egg

Seasoning: cooking wine, salt, soy sauce, sugar, sesame oil


1, chop the green onion and ginger, beat the egg, and add it to the minced pork together.

2, add minced meat with wine, and salt and stir hard in the same direction until you are sticky.

3, water chestnuts peeled and chopped, whole wheat toast chopped (the practice of whole wheat toast here), together with the minced meat, and mix well.

4, scoop a large spoonful of filling in the palm of your hand, slightly knead into balls and then gently pat back and forth between the palms of your hands to expel the internal air. Make the lion's head made a little sturdier.

5, heat a frying pan and add oil to heat, put the meatballs into the medium heat, and fry until the surface is golden brown strain off the excess oil.

6, add soy sauce, sugar, and the appropriate amount of water, cook over low heat until tasty and then reduce the sauce, drizzle with sesame oil on the plate;

Spicy three diced meat sauce

Ingredients: 300 grams of pork, 150 grams of carrots, 100 grams of potatoes, 50 grams of onions, 100 grams of June fresh bean paste, 50 grams of Pixian bean paste, 15 grams of cooking wine, 30 grams of sugar, 20 grams of vinegar, 10 grams of soy sauce, 3 grams of star anise, 10 grams of ground ginger, 50 grams of salad oil


1. Clean the pork, cut it into soybean-sized dice and set aside

3. Wash and peel potatoes, cut into dice

4. Peel and cut the onion into dice and set aside

Pepper and sesame chicken wings

Ingredients: chicken wings, green and red pepper, ginger, pepper, soy sauce, sugar, cooking wine, salt, oil


1. Wash the chicken wings and make 2 cuts on the wings. Wash the green and red peppers and cut diagonal sections.

2. Put the chicken wings into a container, add wine, ginger, salt and mix well and marinate for 15 minutes.

3. Heat the oil in a pot until it reaches 70% heat, pour in the peppers and green and red pepper segments, and pop them.

4. Pour in the chicken wings, turn to medium-low heat and fry slowly until golden brown on both sides.

5. Add soy sauce, sugar, and stir-fry to evenly color the chicken wings.

6. Continue to fry the chicken wings over medium-low heat until they are cooked through.
