As a rule, I prefer light dishes, but from time to time a heavier recipe also works, so to speak. This time they come to you with a kind of meatballs, of Swedish origin, bathed in a cream sauce and beef soup. What's cool about this type of Swedish meatballs in sauce? That they can be eaten with rice, mashed potatoes and (my favorite) pasta. The sauce for these meatballs is very creamy and flavorful, so it will go great with any side dish.

Back to the Swedish meatballs. In their language they are called köttbullar and can be tasted in the IKEA menu. Of course, it's easier to make them yourself, at home. In search of the authentic recipe, I came to this Swedish website that also promotes their traditional cuisine. According to them, these meatballs are prepared from a mixture of minced meat (pork - beef), they contain breadcrumbs soaked in milk, onions sauteed in butter and a spice called "allspice".

What is allspice?

Allspice is not a spice mix, as the name may mislead us. Allspice is nothing but enibahar (allspice), also called Jamaican pepper. Some very aromatic grains, with a combined flavor of cloves, cinnamon and nutmeg. Allspice can be found in supermarkets and online spice shops and it would be good to buy it in the form of grains (not ground) that you can crush when you need it. That's how it is with all spices... they are more aromatic if you grind them only when you use them. Seasoning goes well with fish, mutton or some home-made sausages (not all!). Since allspice has a very strong aroma, care must be taken when dosing it in preparations.

It is clear that these spices differ from the ones we are used to when making meatballs: garlic, thyme, cumin, paprika, but they are worth trying. Here you can find the classic recipe for meatballs that I learned from my mother.

Ingredients

  • 1 kg minced meat (beef-pork mixture)
  • 3 slices of bread
  • 2 tablespoons olive oil
  • A medium onion
  • 100 ml of milk
  • 1 egg
  • Salt and pepper
  • Ground nutmeg
  • Granulated garlic
  • 50 gr of butter

Method of preparation

  • To start, I cut the slices of bread into cubes and put them in a bowl, along with the milk. I left them for about 10 minutes while the bread absorbed all the milk.
  • In the meantime, I cut the onion finely and put it to temper for about 3 minutes.
  • After I was done with the onion, I added the meat, egg, bread, onion, and seasonings to the bowl and mixed them well.
  • We started to form the meatballs, which we placed nicely on a baking paper. Then I put the 2 tablespoons of olive oil, as well as the butter, in a hot pan.
  • I left them for about 2 minutes on one side, then turned them on the other side, until they were well browned. I removed them to a plate and continued with the sauce.

Ingredients needed for the beef sauce:

  • 100 gr of butter
  • 50 gr flour
  • 500 ml beef soup
  • 200 ml cooking cream
  • Salt and pepper
  • Fresh parsley

Method of preparation

In the pan in which I fried the meatballs, I put the butter to melt, then I added the flour and mixed quickly, I added the beef soup, the cooking cream and the spices. I let it simmer until it thickens and becomes creamy. Then I put the meatballs back in the pan, over the sauce and added the fresh, finely chopped parsley.
