The Sportsman’s Breakfast by Amanda Payne

The Sportsman’s Breakfast is made with scrambled eggs, tender meat, veggies, and salsa. This recipe is the perfect way to start the day, but it is also great for lunch, dinner, or whenever the urge strikes!

This meal is so easy to make, and best of all, it is diet-friendly. It is low in calories, loaded with vitamins, and it will fill you up quickly and keep you full for hours. It is the perfect diet food!

The Sportsman’s Breakfast Recipe

Ingredients:

  • 1 cup of thinly sliced venison (backstrap or tenderloin)
  • 8 eggs
  • 1/4 cup of whole milk
  • 1/4 onion, diced
  • 1/4 green bell pepper, diced
  • 1 cup broccoli, chopped into bite-sized pieces
  • 1 cup of mixed salad
  • 3/4 cup of salsa
  • Salt and black pepper to taste
  • Olive oil for frying

Getting It Done:

  1. Prepare the backstrap or tenderloin by removing all fat and silver skin. Thinly slice the meat into small bite-sized pieces. Dash it with salt and black pepper.
  2. Preheat a pan to medium-high heat and add a dash of olive oil. Once the pan is nice and hot, add the meat. Stir or flip the meat often until lightly browned. This should only take a few minutes.
  3. Next, dice the onions and peppers, chop broccoli into bite-sized pieces, and add it to a bowl, along with one cup of salad. Then in a separate bowl, measure out the salsa. Set all of this aside for later.
  4. Preheat a frying pan to 250°F or medium heat. Add cooking spray or a dash of olive oil to the pan once preheated.
  5. Crack eight eggs into a large bowl. Add milk and a dash of salt and pepper and beat together.
  6. Add the eggs to the pan and scramble until they are almost done.
  7. Then turn the heat down to low and pour the bowl of veggies on top of the eggs. Gently mix and let it cook for about 5 minutes, stirring occasionally.
  8. Then add the salsa and toss it to cover the egg mixture well. Let that cook for another 5 minutes.
  9. Add the fried meat to the pan. Toss, remove from the pan, and enjoy!

This is a meal in one, but it also goes great with toast or biscuits. If you do not have any venison, you can use beef, chicken, turkey, or any other meat you have on hand or leave it out. You can also use whatever assortment of veggies you prefer or add spices and cheese. Make it your own creation!
