Exploring the Northeastern Thai Fried Rice dish

Unsurprisingly, one of the most popular worldwide cuisine is Thai food… so today, I am exploring the ingredients and history of the Thai Fried Rice.

If you have ever visited an Asian cuisine restaurant, you would notice that the menu might have an item by the name of “Fried Rice,” whether that is a Chinese owned restaurant or an Thai restaurant itself. The Fried Rice’s ingredients are typically like this:

- Egg

- Chopped Onions

- Diced Carrots

- Peas

- Soy Sauces

- Vegetable Oils

- Choice of Proteins; Chicken, Pork, Beef, Shrimp, Etc….

Chinese Fried Rice

However….. This is NOT the Thai Fried Rice that I am sharing with you as this simple recipe is not even served in Thailand at all, but it is widely seen in Chinese restaurants that mimic this dish.

In Thailand, there are four main regions; the Northeastern that I will be sharing the recipe with, the Central Region where Bangkok is located, the Southern regions that borders with Malaysia, and the Northern regions with its mountainous range throughout the many provinces. This all provides for a different style and unique recipes of the Thai Fried Rice.

The Northeastern region has an unique way of cooking the Fried Rice as not only is it incredibly spicy, but is also one where there is a beautiful balance of flavor like the saltiness, sweetness, spiciness, and acidity to the dish.

Thai Fried Rice with diced Spam, Carrots, Scallions, Tomatoes, etc...

The Northeastern Thai Fried Rice recipe calls for:

- Egg

- Chopped Onions

- Diced Carrots

- Pea

- Scallions

- Diced Garlic

- White Pepper (Or Black Pepper if preferred)

- Sugar

- Oyster Sauce

- Thin Soy Sauce

- Mushroom Soy Sauce

- Golden Mountain Seasoning Sauce

- Jasmine Rice

- Any Oils; preferably Vegetable Oils.

- Any Proteins; best with Chicken

- Cilantro

- Lime

- Slices of Cucumber

- Thai Chili; chopped

The various sauces that go into the dish would account for the saltiness in the flavor while we can taste the sweetness for ourselves with the addition of sugar.

Now… please note that there is NO labels of any ingredients measurement, is it therefore YOU and YOU alone that is cooking will have to add the various sauces or ingredients to your preferred taste.

This is because you would then learn how to properly cook to your palate.

Please have a SPATULA READY!

Various Ingredients used in Thai Cuisine

Cooking the Thai Fried Rice:

1) Once you have cooked your Jasmine rice, prepare it in a bowl so you can quickly add in the rice to the Wok or Pan while cooking.

In the Bowl; add in the:

Chopped Onions

Diced Carrots

Pea

*(If you do not know how to cook Rice, refer to the "How to Cook Jasmine Rice" article by the author) *

2) On a smaller cup or bowl; add in the various sauce:

Golden Mountain Seasoning

Oyster Sauce

Thin Soy Sauce

Mushroom Soy Sauce

*The sauce from each should not be more than a Tablespoon; some of the sauce should require just even ONE TEASPOON

→ Overall, the Sauce mixture should still depend on the rice amount. A good meal size should just require 1/3 of a cup for the sauce Mixture.

3) On the Wok or Pan, add in the preferred Oils (Vegetable Oils) to the Wok and fire up, then add in the diced Garlic.

4) Once the Diced Garlic is golden brown, crack a EGG (or two) on your spatula and add the egg in. (Please don’t add in the part of the egg shell )

5) Stir the egg around until is it Golden or Yellow,

6) Add in your preferred Protein (Chicken) and cook the chicken.

Don’t forget to stir with the spatula.

7) Add in the Rice;

Stir and try to keep the temperature steady… with your Spatula, separate out the rice so that its individual rice grains are apart so when you add in the Sauce Mixture, they would spread out evenly.

8) Add in your Sauce Mixture after the rice had been cooked for about a minute or so.

Stir with Spatula, spread the sauce to all part of the rice.

Turn the temperature downward

9) Add in Sugar for taste.

If you do not like the taste, adjust it by adding the various sauces.

10) Once you deem the flavor to your liking, put the Fried Rice on a plate.

Chop Cilantro and sprinkle it around the dish, or centered for better appearance.

Add a slice of Lime to the side for flavor.

Sprinkle of White or Black Pepper on the Fried Rice.

Slices of Cucumber on the side of the dish if preferred.

And there you have it!

A beautiful Thai Fried Rice.
