The neon sign outside the diner window was a buzzing, broken arrow that couldn’t decide whether to stay red or die completely. It was 3:00 AM on a slick, freezing October Tuesday, and the rain was hitting the asphalt outside with a steady, metallic hiss. This place didn't have a hostess, a dress code, or a line out the door. It sat right at the intersection where the highway gave up and turned into dirt, surrounded by thousands of acres of empty wood and black sky.

Chikanda
In March 2022, near the end of the Great Pandemic, I finally visited my eldest daughter in Zambia, where she had worked for the past seven years. Her career in Zambia began in February 2016 with a three-month training program followed by a two-year stint in the US Peace Corps, then continued for two more years, during which Peace Corps extended her work as a farming consultant who spoke the local iciBemba language, helping a rural NGO called Choshen Farm. At the beginning of the pandemic, when Peace Corps closed its entire operation worldwide in one week and flew 6,000 volunteers back to the United States, she was able to finalize her work permit to continue her work at the Choshen Farm organization and stay in Zambia. Our family was prevented from seeing her due to health reasons and worldwide flight restrictions from February 2020.

Closing the Emotional Buffet.
The word mistress implies a secret. It suggests a woman hidden away in the dark, kept under lock and key, brought out only when it is convenient, and tucked back into the shadows when the real world demands attention. But an emotional mistress doesn’t hide her body; she hides her soul. She is the woman who leaves the door to her mind wide open, allowing broken, fragile, hollow men to walk inside, dust their boots off, dump their heavy baggage on her rug, and drink until they are full.

A Taste of London…simply fantastic!
There is a show on Recipe.TV called “A Taste of London” hosted by Chef Edward Delling- Williams. It is as the title of the show says the food of London and culture. Being a native of London Edward Delling-Williams on the subject of London and the food. I love to watch a taste of London anytime it’s on. I would even watch reruns of it even if I’ve seen the episode before because it’s so enjoyable. I also like Edward Delling- Williams. He’s a personal host of the show one of my favorite cooking show personalities.
