Delicious taters (potatoes) stuffed with taco-flavored ground venison and topped with shredded cheddar cheese, sour cream, and onions.

Doesn't that sound and look amazing? I can tell you that it's even better than it looks.

I knew potatoes were secretly in love with tacos. So I married them in a ceremony of delicious bliss. I took photos along the way so I could provide step-by-step directions.

First, just to be clear, a tater is a potato. I feel that Louis Armstrong should have sung, "You like potato and I like tater" instead of "potahto," but who am I to judge?

Ingredients:

  • 6 large baking potatoes
  • 1 lb. of venison, ground
  • 1 onion, chopped
  • 1 pack of Taco Seasoning
  • 1/4 cup of water
  • 1 cup fat-free sour cream
  • 1/4 cup of milk
  • 2 cups of cheddar cheese, shredded
  • 3 green onions, sliced

Getting It Done:

Preheat oven to 475°F degrees. Wash the taters and poke them with a knife several times all the way around and bake them in the oven for about an hour or until they are done.

Chop the onion and fry it with the venison burger, breaking the venison up into small pieces as it fries.

When done, add the taco pack and 1/4 cup of water and cook for about a minute and set it aside.

Once the taters are done, let them cool just until they are cooled enough to touch. Remove about an inch wide sliver of tater skin from the tops of the taters with a knife.

Scoop the inside of the taters out using a teaspoon.

Put the insides of only four taters in a large bowl. Mix the tater insides with milk and 1/2 cup of sour cream and mash until all of the lumps are out.

Add and mix in the taco mixture and then 1 cup of cheddar cheese.

Stuff the potato mixture back into the skins using a teaspoon and sprinkle 1 cup of cheddar cheese over the tops and bake at 350°F or until the cheese is melted. This should take no longer than five minutes.

To serve, top with sour cream, and diced green onions. To help them cool down faster you can cut them across the middle.

Reheating Directions

You can heat these taco stuffed taters in the oven or the microwave. For microwave, remove a tater from the refrigerator and place it on a microwave-safe plate. Heat it for 30 seconds at a time, turning it after each heating. Continue until you are at the right temperature.

For heating in the oven, remove them from the refrigerator and let them sit at room temperature for about an hour. Preheat the oven to 350°F. Put the potatoes in an oven-safe dish covered with foil. Bake for about 20 minutes or until heated well. The temperature in the middle should be at least 165°F.
