More Than Christmas Cheer

Christmas Fattignon

There is nothing like the smells of Christmas Holidays with the family, the sound of the cheer and Christmas carols on the radio. The same stuff growing up hearing as a child, always the same even as the times changes and life goes by.

No matter the families traditions and your own, there is nothing like the favorite dishes and desserts like vegetables caseroles or making iced cookies on the holidays with friends and family. Memories of trying out new Jewish recipies for apple latkes for the first time for Hanukkah.

The richest family recipies with the liveliest family memories behind it for me which holds more memories for me is the Christmas Cheer and the family reciepie of Fattignon. They are cakes like funnel cakes that you see in the food court in the zoo, or the fair. but a more traditional and not as sweet,or meticulously made.

The fattignon recipie followed down many generations in my family from my Danish/Norwegian relatives on my fathers side. Having had orginiated in Denmark and being passed on for years and years it was always a favorite in that part in my families Christmas desert traditions. Not as healthy and sweet as kosher latkes,

Not as rich and decortative as glazed cookies, not as wholesomely healthy and delicious as pumkin pie. This recipe is still a delicious family tradition on my fathers side. Not as sweet as many deserts out there, like a family favourite Middle Eastern balklava, or apple cinnamon cake, but these little treats are still a ymmy crispy, sweet aned delicious fun way of celebrating the holidays with family.

This flakey tasty desert is a must try for people who like trying new things and can make this desert in their own way and try new things. Like adding strawberries, frying it in organic coconut oil, adding cinnamon and organic cane sugar, or making fun shapes out of the dough before cooking it.

Although not the go to for people with gluten sensitivities or strict dietary standards, it is still an amazing dessert, with room left for tweaks for whatever someone is feeling hungry for, or want to expieriment with something new.

The origianl family recipie. Because when the weather outside is cold, and the snow is coming down,what better way of warming up for the holidays with a cup of hot coco, the sweet smells of spices that linger throughout the air than by making some Fattignon, along with a few other family favorites. This recipie of a few that I will share with you came from my Papas' GreatGreatGrandmother.

Ingredients:

  • 2 Whole Eggs +I Yolk
  • 1/2 Cup Sugar(organic sugar cane)
  • 3 TBSP Cream(Or almond milk)
  • 2 TBSP Melted Butter(or Smart Balance)
  • 1 3/4 - 2 Cups Flour(organic wheat)
  • 1/4 TSP Cardamom/nutmeg
  • Fat for deep frying( I recommend organic non refined coconut oil for a healthier, sweeter flavor)
  • confectioners sugar
  • Directions:

    1. Combines eggs, sugar, cream, melted butter, flour, and cardamom/nutmeg in a large bowl
    2. Roll out dough in thin pieces, but big enough for them to expand and fill with air
    3. cut pieces evenly sized and sideways, or get creative and make shapes
    4. Fill pan with oil until reaches boiling point, and let them fry!
    5. Take them out after they have become golden brown and lay on papertowel for absorbtion
    6. Let them cool off, use confectioners sugar and enjoy!
    7. Optional:
    8. combine cane sugar, and cinnamon and roll them around for Cinnamon Fattignon!
    9. make/buy whipped cream and dip them with strawberries
    10. Or,
    11. melt chocolate and drizzle it along pieces and allow the chocolate to dry while the fattignon cools off

    Deviled Eggs

    Something that would be good for anyone who is not a vegan and that is a common favorite of many. I have many family memories of making this quick easy and tasty snack. This treat commonly made that everyone has their own ways of making is delicious and simple.

    This recipie does not come with any speicific holiday, but comes with many memories and times I have made this delicious snack with my Grandma and Grandpa. Simple and easy recipie for an on the go snack or a meal appitizer. Something that never gets old for me, and would make a great complimentary dish at a Birthday party, BBQ, or Pot Luck. This one does not orginiate in my family, but has still been a favorite for years.

    My family and I have made this recipie as long as I can remember, and still one of my favorites.

    Ingredients:

  • 6 Large Hard Boiled Eggs(12 servings)
  • 1/4 TSP Pepper
  • 1/2 TSP Ground Mustard
  • 1 Pinch Salt(Preferably Himayalan Salt, Dead Sea Salt, or Celtic Sea Salt)
  • 1/2 TSP White Distilled Vinegar
  • Kraft/Veganise Mayonnaise
  • Paprika (or Smoked Paprika for added flavor)
  • Freeze-dried/fresh Chives
  • Directions:

    1. After boiling and cooling 6 large eggs, peel carefully and cut them in half hot dog style.
    2. After scrooping out the egg yolks combine with the rest of the ingredients slowly adding Mayo/Veganise as needed for a good even consistency. Careful not to add too much. Than spoon out and fill thecut open egg whites and sprinkle paprika and chives on top for taste.
    3. Enjoy :)

    Optional:

    Add fresh pieces of parsley, garlic or other herbs and seasonings with paprika or the mix depending on your taste :)

    Ma Fries

    Growing up young as a child every now and then my mama would make ma fries! A favorite with dinner or a crunch slack alone they were popular between me, my sister, brother and I. We called them Ma Fries for the unique yummy crisply salt flavor of frech firies and motherly love behind them.

    A great savory way of having delicious fries fresh from the oven.

    Childhood memories of everyone being so happy for trying the first bite!

    Ingredients (4 servings)

    • 4 Potatoes silced 1/4 inch thick
    • 8-16 eggwhites for a batch of 4 ( or 1-2 for 1) etc.
    • Optional: Combines Salt, Pepper, Rosemary, Garlic, Tumeric, Basil in egg whites for added flavor

    Directions:

  • Preheat Oven to 350 degrees
  • Oil pan with spam,or olive oil
  • Spread Potatoe wedges out evenly affer dipping in stirred egg whites, herbs and seasons for desired taste.
  • Drizzle seasame oil on potatoes, season with dill weed.(Also optional)
  • Bake until they are golden brown
  • cool and eat with ketchup and mustard.
  • Optional: Before completely golden brown add shredded cheese on fries for even yummier ma fries!

    Apple Latkes

    One of my favourite deserts I have tried making on my own and still have to improve on. A healthy and fruity fish for the holidays!

    A Jewish Hanakkuh desert made with delicious kosher apples enough for a smile on anyones face. These make for a deilicious and healthy holiday special.

    They are not just yummy and sweet but fairly simple to make as well. Theres a large number of variations for Latkes, from crispy salty potatoe latkes or sweet apple Latkes like this recipe here.

    I got the recipie I've used online, and added a few on my own ingredients.

    Ingredients (As Listed+)

    • 4 tart apples, cored peeled, and sliced
    • 2 TBS brown sugar( organic is best)
    • 3TBS brandy or kirsch(or Manichwietz for added sweetness)
    • 2 Large seperatedd eggs
    • 1 cup flour
    • 1 cup water
    • vegtable oil for frying (I recommend nonrefined organic coconut oil for extra flavor and health, or extra virgin olive oil)
    • confectioners Sugar

    Directions:

    Place each apple slice inside of a shallow bowl with chosen liquor, coating them fully and adding brown sugar and cinnamon(optional) before leaving them to absorb.Allow their absorbtion flipping them occasionally within that hour. Make sure the apples are absorbing the liquid. After they have almost finished soaking beat the egg yolks with the oil and salt. Gradually stir the flour with them and mixing them well. Drizzle in the water and avoid lumps by beating it continiuously.

    Let the ingredients sit for an hour at toom temp. In a bowl that is dry and clearn beat the egg whites until they are readt and fold in the batter. In a skillet that is large heat 1 cup of chosen oil(with a depth of 1/2to 3/4inches)until your oil sizzles on contact with your latkes batter. After dipping each apple slice into your batter, lower them in the oil. Fry both sides ofthem until they have reached golden brown.Drain access oil on papertowels before adding confectionary sugar or another flavoring.

    Enjoy with a cool glass of kosher good karma flaxmilk!
