So Good You Won't Want To Share

Everyone's had a regular jalapeno popper. Every restaurant out there has one and going to a party you are sure to have yet another sad jalapeno popper. The cheese is either too crunchy or the jalapeno undercooked. Just isn't overall satisfying.

So why not make your own to spice things up? (every pun intended)

Using this easy recipe with only six ingredients, it is sure to be a show stopper at any event. This will be the first dish to disappear at any party and you will wish you had made more. Everyone will ask where you got these from and compliment you on how amazing they are. No one will believe you on how easy these little guys are to make!

So here's what you'll need:

  • cupcake tray
  • bowl
  • cooking pan
  • cutting board
  • spoon
  • knife

Ingredients:

  • Wonton squares (I get these from Meijer, it's usually in the fridge area in the produce)
  • 8oz of cream cheese
  • sour cream
  • Mexican shredded cheese
  • 4-6 stripes of cooked bacon
  • 2 or more jalapenos
  • optional: salt, pepper, onion powder, cayenne

Serving size is approximately 16 wontons, it just really depends on how much filling you put into each wonton.

Now to make the most delicious appetizer that will ever grace the appetizer table:

  1. Preheat oven to 350.
  2. While the oven is preheating, place the wonton-paper squares into the cupcake tray. Press down slightly so that the squares are secure in each cupcake spot. The wontons are coated with flour so you do not have to spray the cupcake tray.
  3. Place tray in oven and bake until the tops of the wontons are golden brown.
  4. While wontons are in the oven, warm a pan on the stove and cook the bacon until slightly crispy.
  5. Remove bacon and let cool, pat dry with paper towel.
  6. Chop the jalapenos into small pieces. I usually use 2, but you can add more depending on how spicy you would like your jalapeno poppers to be.
  7. Chop bacon into small pieces (about the same size as the jalapenos).
  8. In a medium sized mixing bowl, warm cream cheese in the microwave for about 20 seconds or until soft.
  9. Add sour cream, this is an "until it looks right" kind of thing. Start with about a 1/4 cup. Mix with cream cheese until smooth and creamy. If it's not looking creamy, you can always add more sour cream a little bit at a time. If you would like to add in seasonings, mix in.
  10. Once creamy, add in Mexican cheese until the mixture looks chunky.
  11. Mix in the chopped jalapenos and bacon.
  12. Scoop a small ball of the jalapeno mixture into each wonton cup.
  13. Top with a pinch of shredded cheese.
  14. Place wontons back in the oven until cheese has melted.
  15. Remove wontons from cupcake tray onto a serving tray and enjoy! These are at their best when they are fresh out of the oven so I recommend making them right before you need them, but they are just as tasty at room temperature.

I made these the other night for a "Girl's Night-In" and we were practically fighting over them! Everybody wanted one and I wish I had made more so they would have lasted longer!

A couple tips, the number of jalapenos may very on the size of them. I usually use two medium-ish sized jalapenos, but you can either use one large one or three small ones for the same bite. Adding a dash of cayenne can really enhance the flavors if you're looking for an extra kick. If you also wish to add some extra flavor you can swap out the Mexican cheese for a taco cheese blend. The taco cheese usually has the same cheese flavors, but there is taco seasoning already mixed in with the cheese, I highly recommend it.

I hope you enjoy these as much as I do!
